Description

A blend with a higher percentage of Arabica coffee, with sweet notes of chocolate and hazelnuts and a round body.

Allegro blend is composed of 70% Arabica and 30% robusta:

  • Colombia Finca la Meseta, washed arabica
  • Brazil Bom chocolate, natural arabica
  • India Kalledevarapura, semi-washed arabica
  • Tanzania Superior, robust natural
  • Congo Mombasa, robust natural
  • Ivory Coast, robust natural

Allegro is the flagship blend of the Torrefazione in Corso Buenos Aires, 20 in Milan, which has been served at the counter for several decades now, releasing from time to time the fresh, sweet aromas of single-origin Arabica, combined with the full-bodied, intense flavor of robusta.

The nose has an intense aroma with notes of cocoa and nuts.

On the palate there is immediately a delicate acidity, with hints of citrus, which immediately fades in favor of the sweetness of red fruits and hazelnuts, balanced by a pleasant bitterness, which carries with it the hint of cocoa, very persistent over time.

Coffee history

Today we travel to five different states with our Allegro blend: Colombia, India, Brazil, Tanzania and Congo.

You may have already tasted the single-origins, now taste them in blends and see how they enhance each other, creating a unique and complex taste.

Colombia

Let’s start with Colombia among the world’s most striking caffeic areas, so much so that its landscapes are a UNESCO World Heritage Site.

The Eje Cafetero is a rural area that stretches across several departments toward the south of the state, beyond Medellin. The best known are those of: Caldas, Quindio, Risaralda, Tolima, and Valle del Cauca.

Here life flows slowly, in contact with and respect for nature, made up of simplicity and centuries-old cultural traditions.

Coffee has affected the economy, lifestyle, traditions, customs and traditions of the small historic villages of farmers, who pass on knowledge and skills from father to son.

When I drink a cup of Colombia Supremo Finca la Meseta, I imagine myself among the beautiful hot springs, nestled among vast plantations of deep emerald green, embraced by nebula forests, among steep valleys and glacier-bearing peaks, sun-kissed and overlooking the Andes National Parks.

Here is the hacienda from which we purchase our Colombian coffee, from the Finca called La Meseta.
Region dotted with Andean forest, with a climate between 8° and 24° Celsius, between 1100 and 2000 m above sea level, and with constant rainfall throughout the year. All this makes the land perfect for growing the highest quality coffee.
And to honor their product, the recognedores, or red berry pickers, always work manually, making careful selection and picking only the cherries that are ripe at the right point.

The taste is soft, fresh, fruity, floral and almondy. Smell the cup of Blue Diamond and you’ll smell that intense almond note!

India

We pass into India among the Baba Budan Giri hills, below the Tropic of Cancer, constituting the main region for the production and consumption of the dark drink.

Specifically, with our Kalledevarapura, we are in the region of Karnataka and Tamil Nadu.

These regions are cool throughout the year and enjoy abundant rainfall. The soil is deep and fertile. In addition, the peculiarity of this area is the presence of tall trees, which allow coffee plants to be grown in the shade, sheltering them from the strong and hot direct sun.

These conditions create fertile ground for the cultivation of great coffee!

The same plantations then grow not only coffee, but also pepper, cardamom, cinnamon, cloves, nutmeg and 45 other types of plants. This botanical heterogeneity gives the beans great aromatic variety and intensity in taste.

In short, a trip to Indian plantations I imagine him with his nose in the air, ready to catch all the imaginative aromatic nuances and the heady scent of flowers, fruits and spices.

Overall, Indian Arabica coffees have good acidity and creaminess, rich in flavors: from tea leaves, chocolate, ripe pulp fruit to red fruits, chocolate to honey, and nuts to spices and tobacco. In short, a riot of taste.

Brazil

We return to America by landing in Brazil the number one state in terms of the amount of coffee produced and sold in the world, which is why it is also one of the most consumed and well-known coffees!

Map showing in large print the caffeic zone from where Ernani gets its Brazilian single-origin and in small print all the other caffeic zones in BrazilThere are a multitude of farms in Brazil, both large as far as the eye can see, using industrial means and producing poor quality coffee, and micro farms of Specialty Coffee. In short, the coffee territory is vast and varied.

The two departments known for producing quality coffee are the Cerrado region, from which our Bom Chocolate comes, and the Minas Gerais region slightly southeast of the former.

The Cerrado region obtained the IP (Indication of Origin) mark in 2005 and the DO, then also recognized with the Denomination of Origin mark, since 2014. This is characterized by the quality of raw grains and for unique climatic combinations. In addition, coffee plants have intense flowerings, with uniform ripening of a concentrated crop, which together with a perfect definition of climatic seasons, with hot, humid summers and mild, dry winters.

A perfectly synchronized set of variables that create unique and ideal conditions for our beloved plant with bright red fruits.

Authentic Cerrado Mineiro coffee has intense aromas, with a caramel taste and hints of dried fruit, delicate citrus acidity and a preponderant flavor of very persistent chocolate.

I imagine Brazil to be vast, consisting of hills and plateaus between 900 and 1,600 meters above sea level. Green and fields as far as the eye can see with a clear sky contrasting the land.

Africa

We conclude our journey in Africa, the cradle of human civilization, the birthplace of the coffee plant, the only land that seems to tell us the beginning of every Story.

Map showing in large print the caffeic zone from where Ernani gets his single-origin robusta tanzania and in small print all the other caffeic zones in tanzaniaThe first natural robusta comes from Tanzania is a Superior, from the Bukoba region, grown above 800 meters above sea level.

Tanzania is a state I am very fond of and have had the pleasure of visiting both along the coast and inland. In the midst of giraffes, lions, and other savannah animals, he shows us some of the wonders of the world, rich contrasting colors: red earth, savannah with green trees, and a clear blue sky.

People also always have colorful clothes and a beautiful smile on their faces.

The coffee-growing area of Kagera and Bukoba, in the northeast of the country on the shores of Lake Victoria, in which areas mainly natural robusta with an intense aroma and chocolatey taste is grown.

Map showing in large print the coffee-growing area from where Ernani gets its single-origin robusta congo and in small print all the other coffee-growing areas in CongoThe second natural robusta comes from Congo, from the Mombasa area in the northeastern part of the state cultivated above 600 meters above sea level.

Grains from the Congo often have a rich flavor with high levels of caffeine. This gives it more bitterness and a truly intense roundness and body.

The coffee-growing area called the Great North, perhaps one of the most fruitful areas in the state, of both great Arabica coffee and also quality Robusta offers full, intense, creamy and full-bodied coffees with aromatic notes that bring to life the taste of the plant: light woody notes, flowers and roasted cocoa.

So with a taste of our Allegro you will find yourself first in Colombia, with the more delicate notes of red fruits and almonds.

Soon after comes the aromatic complexity of Indian spices along with a hint of tobacco. And finally in Brazil, with roasted notes such as caramel and chocolate.

In the aftertaste, on the other hand, you will travel to Africa with lingering aromatic notes of bitter cocoa that characterize the selected robustas.

This blend is excellent in mocha, espresso, and capsules.
