On Friday, March 22, 2024, we held our second theme night at Torrefazione Ernani in Milan!

How did it go? What have we done? Will there be other events?

These are the questions you have asked the most, so let’s answer them together in the new article of ABCoffee, the weekly blog of Caffè Ernani!

The evening

The second cafeteria event had as its theme Ms. Moka, the undisputed queen of Italian homes but often not exploited to its full potential.

We started with a bit of theory–how can you figure out how to make the most of the coffee you have using the mocha if you don’t know the coffee, how the tool works, and the variables of extraction?

So we shed light on what coffee is and where it grows, the differences of the two main species, namely arabica and robusta, the methods of harvesting and processing, moving on from roasting to understanding extraction, grinding and possible related errors.

In short, a summary of everything related to coffee, geared mainly toward understanding the very nature of making the drink with the Italian coffee maker.

Once the world we were immersing ourselves in was defined, discovering its beauties and immensity, we moved on to the practical part.

Surely this phase was more hands-on and fun allowing us to put into practice everything we had previously discussed.

The practice

This involved making coffee by four different methods:
  • Homemade method, i.e., following the “keep it simple” principle, as anyone would brew a mocha at home, without scales, kettle, thermometer, etc. However, following the correct steps to avoid mistakes that would compromise the taste of the coffee in the cup.

  • Professional Method, that is, following all, but really all the correct steps, also employing a correct Brew Ratio, thanks to the specific scale for brewing, and many other tricks.

Without boring you too much I will leave you directly with the video to refer to:

Tasting coffee resulting from the first and second methods, all the trainees immediately understood the difference on the palate and in unison confirmed how much better the taste with the second method was, richer in aroma and with less lingering bitterness.

How does this so recognizable change occur?

For an infinite number of reasons…staying on the general though, the answer is simple:

coffee extraction is a matter of chemistry.

Countless researches, studies and tests carried out by the top experts and scientists in the field have identified the correct ratio of water to coffee to make sure that it extracts only the best from the ground coffee and brings the widest and most intense range of aromas to the cup.

As well as, of course, establishing temperatures, water types, preferable pressures and much more.

So if we want to prepare and taste a product to its fullest potential, we cannot rely on “chance,” but must become chemists ourselves, performing each step with precision and punctuality.

The difference then can be felt immediately!

  • Paper Filter Method, but in this one we wanted to repeat the exact same steps as in the second, but resting an additional round paper filter on top of the ground coffee contained in the filter. (the Aeropress ones to be clear). This is because the paper filter, unlike the metal mocha filter, is much denser. As a result we would have a drink with even less bitterness, more delicate, clean, light, but still intensely aromatic.

This method is useful for those who do not like bitterness at all: try inserting a filter paper!

  • Pump My Mocha Cold Method, finally we combined two more types: cold water extraction, using the brand new tool Pump My Mocha (click on the al name to land on the site)! At the moment I still tell you very little, as I will make many videos and articles in the coming months explaining every single feature.

In general, however, I can say that it is the most revolutionary tool for making mocha coffee since the mocha itself was invented in 1933.
It is an external pump combined with a thermometer strip, which redefine the rules of the game. In fact, now one can have full control of extraction: from pressure, to temperature, finally elements independent of the heat source (stove or induction plate).

With Pump My Moka you can do anything, the only limitation will be our creativity.

Will there be other events?

Seeing the enthusiasm of the trainees certainly does!

  • During the premiere we operated an espresso tasting like true professionals.
  • In the second evening, precisely as just presented, we talked about Mocha and its many nuances.
  • During the next evening, which will be held in May 2024, we will explore filter coffee.
  • Finally, in September of the same year, we will reintroduce the Coffee Beer Tasting together with expert Fabio Spollon, aka BeerSlinger89, held for the first time in Desio in October 2023.

These same evenings will then be repeated, both in Milan and Desio during 2025, who knows, maybe even adding more!

Two weeks ago we had introduced the IWCA, which is the International Women in Coffee Alliance.

Instead, today we present the single-origin Specialty coffee belonging to the circuit: the Brazilian Women’s Coffee signed by Ernani Coffee.

Because the association not only promotes and publicizes the importance of supply chain sustainability, but also makes a concrete commitment to support the meticulous work done in the coffee’s countries of origin.

In addition, this Friday, March 8, as you know, will be International Women’s Day, so we wanted to take advantage of this date to let the widest possible audience know about the Association and its projects and concrete help, along with our Café.

For this reason, Caffè delle Donne will be available online at the Ernani Coffee Shop and in Torrefazione Ernani in Milan, Corso Buenos Aires, 20. Here you can either buy it for home or as a gift, or taste it in espresso.

Along with each package sold, we will combine a descriptive flyer about the Alliance and coffee, so you know exactly what it is and why it has such great value in the industry!

Description of “Women’s Cafe”

A socio-sustainable coffee with a sensual and feminine flavor profile, grown, harvested and processed by women.

Women’s Coffee is a single-origin from the Cachoeira farm in Brazil, grown, harvested, and processed from a pink plantation adhered to the IWCA.

More specifically, it is a Brazilian Santos, from the Minas Gerais area, famous for the high quality of coffees produced.

The larger cursor on the map below indicates exactly which region our coffee comes from. While the other sliders show the other coffee-growing areas of Brazil.

Everywhere, more and more women are becoming an essential part of the bean processing, occupying positions of power and revolutionizing the coffee world. To date, an estimated 70 percent of the workforce in the countries of origin is employed by women, and 25 percent of plantations are managed by women entrepreneurs.

Giving them importance and value by providing better social, economic and working conditions is no longer just important, it is crucial.

But back to us…

The Brazilian Santos Women’s Coffee selected by Ernani grows at an altitude of about 1000m asl, thus giving off pleasant and sweet aromas, which we will see in detail below.

The fruits, containing our kernels, are harvested with extreme care through picking, that is, hand picking drupe by drupe, selecting only those that are ripe at the right point, and processed afterwards using the washed method. Then the growers remove the husk and pulp in order to place the beans inside clean water pots to ferment. Finally, the grains are left to dry in the sun.

This will bring increased freshness and aromaticity during extraction.

It presents sweet notes of almond and red fruits, which are then balanced by a fresh and pleasant tartaric acidity, reminiscent of pink grapefruit.

Balancing this are softer notes of cocoa and nuts.

Suitable for

Those who seek a high-quality, fresh, fruity and citrusy single-origin Arabica, as well as socio-sustainable and Specialty coffee certified.

Compare it to other single-origin Ernani below!

Extraction tips

Espresso

Espresso extract we recommend a dose of 8.5/9g per person, to obtain an intense and creamy cup, and a water temperature of 93°C.

With this method the more acidic notes are enhanced, in addition to the development of a vast, intense and amazing aromatic profile.

Mocha pot

The coffee in this case is more sweet than acidic, with even a very slight hint of bitterness, absent in the espresso.

N.B. remember never to press the coffee inside the mocha filter and never to make the “mound” either! These steps do not make the coffee more intense, only more bitter and with a burnt aftertaste.

The coffee in the filter just needs to be leveled!

Paper filter

If extracted in a filter, the sweet notes are enhanced even more, while the acidity is more balanced. The aromatic notes of fruit in this case dominate the cup.

We recommend a Brew Ratio of 64g of mince to 1L of water and a temperature of 92°C.

1. Event – Milan Coffee Festival

Before the year ends we will have another time to meet physically at the Milan Coffee Festival!

What is it?

It is a coffee fair, or rather THE fair on quality coffee, held annually in Milan from December 2 to 4.

I say THE fair emphatically because, unlike other industry fairs that focus a lot on business, finding new customers or showing the latest product launched on the market, always focusing on industry players, the Milan Coffee Festival is interesting for all coffee lovers in general.

It doesn’t just stop at the purely business part, but goes beyond that: it aims to popularize the world of quality Italian coffee.

In fact, no commercial or shoddy brands are ever found at this fair, as all exhibitors and roasters are highly selected to show Milan and all of Italy the excellence of the industry in our area.

It is also smaller, can be said to be on a “human scale,” tickets cost a pittance, and is packed with all kinds of events.

In fact, it will be possible to watch the Roast Masters in action in the contest celebrating the best roasters on the Planet, and discover techniques for perfecting one’s latte art in Latte Art Live.

Another event, to let you know how wide-ranging the topics are, this year there will even be a session Mindfull coffee tasting experience, which is a guided, meditative multi-sensory coffee tasting experience accompanied by the soothing sounds of a sound bath. It’s like Tibetan monks meeting your local hipster bartender.

Ernani Coffee Panettone

Those who have been following us for a while already know this… coffee panettone is a holiday must-have that cannot be renounced, appreciated both by lovers of the traditional dessert and by those who generally do not appreciate the more classic one (like me for example).

This year, however, there is something new: we have changed the recipe slightly, obviously to improve it!

We added 10% more coffee to capture each fragrance in a more intense and defined way, and also added white chocolate, which butter, melting during baking, gives incredible softness, making the dough as soft as a cloud and tasty as never before!

Origin

Women’s Coffee is a single-origin Brazilian Specialty Coffee, grown from a plantation member of IWCA (International Women in Coffee Alliance).

More specifically, it is a Brazilian Santos from the Minas Gerais area, famous for the high quality of coffees produced, grown, harvested, and processed on the Cachoeira plantation.

It is grown at an altitude of about 1000m asl, thus giving off pleasant and sweet aromas, which we will see in detail below.

It was then harvested with great care, following the picking method, whereby only the cherries that are ripe at the right point are picked by hand one by one to ensure perfection in the cup. Then processed by the washed method to release a broad and pleasant aromatic range, along with fine acidity.

Sensory description

It is a coffee with a complex and intriguing aroma, fully reflecting a feminine and sensual profile.

It presents sweet notes of almond and red fruits, which are then balanced by a fresh and pleasant tartaric acidity, reminiscent of pink grapefruit.

Balancing this are softer notes of cocoa and nuts.

Suitable for

Color who seek a high-quality single-origin Arabica that is fresh, fruity and citrusy, as well as socio-sustainable and Specialty coffee certified.

Medium Roasting

The beans are masterfully processed by our roasters, Paolo and Andrea, using the Medium Roast, Ernani’s distinctive signature, which allows all the natural aromas and merits of carefully selected, defect-free raw coffee to be brought out to the fullest, bringing the best of each bean into the cup.

Only in this way is it possible to value the difficult and caring work done originally on plantations.

Recommended extraction methods

Espresso

Espresso extract I recommend a dose of 8.5/9g per person, to get an intense and creamy cup, and a water temperature of 93°C.

With this method the more acidic notes are enhanced, in addition to the development of a vast, intense and amazing aromatic profile.

Mocha pot

The coffee in this case is more sweet than acidic, with even a very slight hint of bitterness, absent in the espresso.

Paper filter

If extracted in a filter, the sweet notes are even more enhanced, while the acidity is more balanced. The aromatic notes of fruit in this case dominate the cup.

In this case I recommend a Brew Ratio of 64g of mince to 1L of water and a temperature of 92°C.

What is IWCA?

The IWCA is a symbol of the struggle against exploitation and gender inequality,

with a greater focus on the grassroots of the coffee supply chain, in which farmers are generally poor and live in poor and precarious social situations and environments.

You should know in fact that, as in almost all industries, the most exploited and underpaid workers are those at the bottom of the different supply chains, in the case of coffee therefore the farmers and pickers.

They have no stable contract or minimum wage, no rights and often no healthy housing for themselves and their family, with no running water or electricity.

But guess who is on the lowest step still? Woman.

In fact, she receives lower pay than the man’s already paltry pay, is not entitled to maternity leave, and much more. Women often work with babies on their backs looking for 10 minutes every so often to devote to breastfeeding, possibly on the sly so as not to be fired.

That’s what the IWCA is all about: identifying the most at-risk situations in the world and fighting to protect workers.

This alliance is composed of a global network that unites and supports the resourcefulness of millions of women around the world, starting from the nerve centers of the coffee trade, such as Guatemala, India, and Brazil, and now operating in more than 23 countries, in which each has founded its own chapter, connected in a double thread with the global association.

It is a nonpartisan, and inclusive organization, which does not consider gender, religion or political thoughts. Accommodates everyone, including individual, private or public organizations.

The only limitation imposed is sharing the common end goal of protecting the rights of every worker and strengthening the garrison of women in the coffee community, which has always been a very masculine environment.

The core values of the association are:

  • Respect for people and their ideas
  • Economic and social sustainability
  • Equity in the distribution of the world’s resources
  • Collaboration between communities and top management of corporate properties
  • The greater empowerment of everyone’s personal resources
  • Inclusion of all: women, men and youth, to make a positive impact on their communities
The key aspect is precisely that it ensures that everyone has the opportunity to lead a dignified, sustainable and meaningful life.

Concrete efforts lie in awarding higher than average pay on coffee plantations, adjusted to the cost of living in the country of interest, greater respect for and protection of workers’ rights, and/or the construction of in-plantation kindergartens or even healthy housing at affordable prices.

We on the Ernani Coffee team strongly believe in gender equality.

In fact, our administrator is actually a woman: Claudia, without whom the whole machine could not move, an essential figure of the whole big family and a point of reference for the team, to say the least.

Then the other female figures are: Monia, Assistant Manager of Torrefazione Ernani in Milan, Corso Buenos Aires, 20; Stephannie, a great barista and machinist; Martina, a novice counter and bartender, but one who shows unparalleled daily improvements, always operational in Torrefazione.

And finally there is me, Martina, Marketing, Social Media and E-commerce manager, passionate about coffee and most of all proud to be part of this team, ready to prove how much us young girls are worth in the working world.

Finally, we could not but join the Italian chapter of IWCA since its founding. Now we are also an active part of the whole project, and you, through this unique and love-filled project, can support gender equality all over the world!

This year we wanted to do things big, to give you the opportunity to get to know the world of coffee from A to Z, in all its facets, even those you would never have thought of!

We want to give the opportunity to anyone, come oncoffee lovers, to the curious, up to professionals in the sector, to touch the raw coffee, its roasting and obviously taste it.

For us, coffee is not just our job, but it is a great passion. Being able to pass it on to you too is our main goal!

Do I have to arrive at 10.30am and stay with you until 5pm?

Absolutely not!

The event will be awalk-in,that is, the doors will always be open to anyone throughout the day. You will therefore be able to arrive immediately at 10.30, or only for the events that interest you most and leave whenever you want.

There will be no pre-established routes to follow, but you will only stop at the stations that attract you the most!

During the day of Sunday 1st October we organized many events together with collaborators and friends from different sectors, all closely linked to the magical toasted bean.

Paolo, Andrea and Martina are waiting for you to follow you in a fun tasting, to discover the incredible flavors that coffee beans can have.

In fact, Giada, CEO of the innovative Milanese publishing house, will be with us throughout the day Another Coffee Stories, who will accompany us in the discovery of his books through a synesthetic journey.

Ok, but in a nutshell what will we do?

Every half hour or so, starting from 10.30, each Author will present his book. In the meantime, we at Caffè Ernani will prepare a coffee expertly combined with the texture to taste it together.

Obviously there will also be space to ask questions to all the writers, as well as buy the books themselves.

You will be able to witness the roasting of different coffee samples and follow all its phases, to see the physical and chemical changes of the beans, from the change in color, size and shape, up to the development of the aromatic profile.

Coffee Beer Tasting!

This will be the most exclusive event of the entire day, so get ready to sign up!

From 5.00 pm the doors will close, but not for everyone!

Because for the 18 of you who purchase the ticket it will be possible to do the Coffee Beer Tasting.

Fabio, in art BeerSlinger89 beer expert, and Martina, coffee expert, will accompany you in the sensorial experience to discover the often unusual union of these two fascinating worlds.

They will tell you about the different brewing methods, and the different ways in which the coffees were used, as well as curiosities and anecdotes that will allow you to know the products offered in even more detail.

Obviously what we all want most is to taste them!

Fabio has selected 4 of them, all from artisanal Italian breweries, which carry out continuous experimentation and analysis to improve their product day after day.

The breweries themselves have then selected only fine specialty coffees for their blending, to leave nothing to chance and work only with great professionals!

As every year, October 1st is the International Coffee Day, together with MilanoCaffè 2022.

On this day we like to promote a different characteristic of coffee and its supply chain every year:

  • in fact, in 2019 we opened the doors of our roasting lab in Desio to show how raw material is transformed;
  • In 2020 we allowed you to taste the first single origin espresso served at the bar of the Torrefazione in Milan, to broaden our horizons and experience first-hand the fact that “coffee is not just a coffee” and that each of them has a completely different aromatic profile;
  • Finally, in 2021, you had the opportunity to get to know two projects we care very much about: the Caffè delle Donne, following our enrollment in the International Alliance of Women in Italian coffee, and the For the Planet blend in collaboration with Gone West, for environmental support. In this case, we discovered how the coffee sector is committed to protecting both rights and the environment.

This year we return to our production laboratory, to involve you 100% in the creation of a blend!

In fact, it was you who guided us in the creation of a new and unprecedented coffee!

In fact, on the occasion of the International Coffee Day and MilanoCaffè 2022, we will present at the historic roasting shop in Corso Buenos Aires, 20 and on the website www.caffeernani.com a new blend, called “My coffee”.

We all of the Ernani team wanted to give a real and concrete space to our customers, together with active users on our social channels. We therefore decided to launch a contest: #BuildYourBlend, that is, create your own blend!

For a week we have therefore published, in the stories of the @caffeernani profile on

Instagram, a series of questions useful for creating the organoleptic profile and the composition of the future blend.

You all answered and the option with the most votes won!

In the first question we asked what degree of sweetness was desired: whether a “very sweet”, “moderately sweet” or “not at all sweet” coffee.

The most awarded entry was: “Medium sweet“.

The second request was “what degree of bitterness was desired”.

We are very proud of this result in particular, as the followers replied “Almost zero bitterness”, finding us in total agreement with them, intent on tasting more fragrant coffees rather than bitter and full-bodied.

Below we asked for the level of acidity, winning, as in the first case, the item “Medium acid”.

Finally, the last question concerned the desired aromatic notes, including “fresher and sweeter notes of citrus and fruit” or “more rounded, of chocolate and caramel”.

The winner was the second.

All these data were then delivered to Paolo and Andrea, the roasters at Caffè Ernani, who immediately set to work to create the blend that reflected all desired parameters.

The creation of the blend

The creation of the blend was more complicated than we expected, as we wanted to offer a Premium, which truly reflects 100% the characteristics you desire and, above all, which is different from all the other Ernani blends, not a simple reblending of coffees already in our experience…

We started by taking one of our single origin coffee still not present in other blends, namely Guatemala, combining it with another Arabica coffees that could give a good sweetness and a soft acidity, however, realizing that these two coffees together did not give the desired result.

We then mixed them with 4 other Arabica origins, but we weren’t there yet.

We had to change our main subject, so we went from Guatemala to Colombia, then joining it to the Indian Kalledevarapura.

Perfect, the base was there: sweetness and creaminess, but lack of originality.

Thus Guatemala returns and… yes, now here we are!

The sweetness and creaminess is now balanced by the acidity of the fruit!

However, that rounder note of chocolate was still missing, and perhaps a little more body.

And this is where the robusta came in!

Initially we did not want to insert it, to reflect the request for “almost zero bitterness”, but trying was wort it!

And fortunately…

It was exactly what the blend lacked: Congo Mombasa, which thanks to its high quality combined with the Medium Roast, does not release any bitter notes, making acidity and sweetness prevail, giving body and cream together.

Here is finally presented the blend “My coffee”, because anyone who orders it, will really order “His coffee”!

Sensory description

Will you feel on the palate?

The blend is composed of 85% Arabica coffee and 15% Robusta coffee.

The prevailing taste is, as already mentioned, the sweetness of fruit and chocolate, balanced by a soft freshness given by citrus fruits, festing with aromatic intensity and creaminess!
The part of Arabica coffee is made up specifically of:
  • Colombiano Supremo Finca la Meseta, with notes of fruit and almonds;
  • Indian Kalledevarapura Estate, creamy and round coffee, with sweet aromas of chocolate, vanilla and fruit;
  • Guatemala SHB Huehuetenango Specialty Coffee, intense and fruity, with a good freshness given by the notes of red fruits.

While the part of Robusta is entirely made of the single origin Congo Mombasa, an excellent intense robust, creamy and full-bodied, with an aftertaste of dark chocolate.

Where to try and buy it

The “My coffee” blend will be available at the Torrefazione Ernani in Milan where you will be able to taste it extracted in espresso. It will also be possible to buy it there for later home use, both in beans and ground at the moment, tailored to your needs!

For those who cannot go to Milan, Il Mio Caffè will also be present on the caffeernani.com website, in the 250g format in beans or ground, for mocha, espresso or filter.

The topic is very sensitive and requires sensitivity and a thorough knowledge of the correct language to use. That is why I do not go into the phenomenon, because I do not feel aware enough to treat it with due respect.

However, on the occasion of this very important Day, we at Ernani wanted to present a project we believe in so much: IWCA.

But what is IWCA?

It stands for the International Alliance of Women in Coffee.

Specifically, IWCA is a nonpartisan and inclusive organization that does not consider gender, religion or political thoughts. The IWCA welcomes everyone, including individual organizations, private or public.

Concrete examples may be just such things as higher pay and especially adjusted to the cost of living, greater respect and protection of their rights, or the construction of in-plantation kindergartens where they can leave their children while working or even the possibility of healthy housing at affordable prices.

The core values of the association are:

  • Respect for people and their ideas;
  • Economic and social sustainability;
  • Equity in the distribution of world resources;
  • Collaboration between communities and top management of corporate properties;
  • The greater empowerment of each person’s personal resources;
  • Inclusion of all: women, men and youth, to make a positive impact on their communities.

If you’ve been following us for a while you’ve probably heard about our Women’s Cafe >> from the Cachoeira farm in Brazil, grown by a group of strong, determined women who control every step of the production process, from tending the plant to harvesting and processing the raw coffee. The company is a member of the IWCA.

Until now, however, we had to rely on global or Brazilian IWCA, as there was no legally recognized office in Italy.

But things are changing!

Thanks to a group of young guys in the coffee industry, IWCA is also coming to life in Italy!

It’s really only a few months away, and we at Cafe Ernani have already joined! We are anxiously waiting to be able to present the whole project in detail, to officially recognize IWCA Italy and to start with them all the projects developed over the past year.

It is still too early, unfortunately, to introduce them to you, but I can assure you that we want to give a strong voice to women, who are too often sidelined and undervalued in this sector.

Last thing…it is important to emphasize that these issues are to be kept in mind at all times, not just on anniversaries like this one. It is important that all the battles and missions are carried on constantly, to achieve true gender equity.
