We repeat it often… we never stop improving, we are firmly and deeply convinced of it.

This applies to the quality of the coffee, the packaging, the service and also the site where you can get information, discover many curiosities and buy coffee.

This is why we decided to change and renew it!

Over the latest 3 years we have collected a lot of feedback, requested the compilation of satisfaction questionnaires from all our customers and accepted all kinds of positive and above all negative advice.

All this allowed us to have a complete and precise picture of what was working and not. Once we had all the useful information we started working to improve every aspect!

The Caffè Ernani Subscription

We have implemented the “subscription” option to help our most loyal customers!

We have noticed that many of you buy almost the same products on a regular basis.

So here is the possibility to standardize and automate the whole process to never have to remember to place another order.

In fact, it is sufficient to go to the page of the desired product and instead of making a “single purchase”, click on “purchase by subscription”, choose the quantity of the product to order and the frequency of sending, enter the shipping and payment data, as if it were a normal order, and then activate your subscription!

From this moment on, you won’t have to think about anything else!

The coolest thing?

It is that you can change the products included in the subscription, their quantity or frequency at any time:

  • Have you realized that you need more coffee? Go to your subscription page in your profile and increase the quantity.
  • Are you bored and would like to change your tastes a bit? Add new products to your subscription or remove others.

And above all: you can cancel it, cancel it or suspend it whenever you want without any limit or payment of penalties!

We know it well… we have many coffees in the shop including blends, single origin and various projects. How to choose?

In addition to the tests mentioned above, you also have categories and tags, i.e. filters, available.

When you enter the Shop, on the left you will see a series of items, such as “Creamy”, “Delicate”, “Bitter”, “Acid”, “Single Origin”, “Blends”, “Chocolate”, “Fruity” and many others still. In fact, each product has a cover, which shows you the aromatic notes featured in the coffee in question.

Will you see Grapefruit and honey in the photo? Well those will be amongst the aromatic notes of that specific coffee. And so for all of our coffees!

Hi Davide! First of all thank you for taking the time to do the interview, I know you are always out and about among all your clients and finding you in the area is difficult!
Let’s break the ice: tell me about your previous professional and educational experiences at Caffè Ernani!

Hi Martina, let’s get started, I’m ready!

I entered the workforce very young, at 17 as a lathe operator in a company in Desio, where I returned to work thanks to Caffè Ernani.

At the same time I had a second job behind the counter of an ice cream bar in Seregno.

The bar counter started calling me very early and I couldn’t resist!

I thus discovered my passion from a young age.

After a few years I moved to another bar, this time in Seveso and for the first time in the evening and got to know the world of mixing.

My path was now crystal clear: Barman, but it was not enough for me to learn in the field, I felt the need to study, learn and professionalize. Reason why I took a professional course at Aibes.

I fully agree with you! By now, avid readers know: for me, education is the basis of everything!
Please note: not that practice and experience are not important; on the contrary, they are crucial. It’s just that a theoretical basis supports practical learning every step of the way: you understand why things happen and then you have to apply it. I’m glad you also felt this same need!
Sorry to interrupt, go ahead.

No, please, it’s nice to be able to compare and find people on the same wave as you.

Coming back to us, upon completion of the course I went to work as a bartender in a hotel in Corso Buenos Aires in Milan.

Then I went back again to work in a Brianza company, this time because unfortunately, as much as I love the restaurant business, sometimes it is a bit hostile and it is difficult to find a good working environment.

In the meantime I took two other courses: the REC, for food and beverage administration, and the Wine Sommelier course. At the end of the latter, my life took a huge turn: the trainer of the course itself introduced me to a club, which would shortly become my club: Cork.

It was 2004 when I started this new and incredible adventure, which lasted a full 18 years. Cork has been my family, my friends and my life for a very long time. Started out as a wine-focused venue, but has transformed over the years, following my interests. Toward the end in fact the mixing side took an important position.

This marked the turning point in my personal and professional career.

Opening from the morning, however, I found that I needed to delve into another additional topic: coffee. I had never given it much thought, but there is as interesting a world behind coffee as there is for wine and blending.

Therefore, I took a professional course again, at AICAF, focusing on cafeteria and coffee knowledge.

Well, I don’t even know what to tell you! You are full of experience and knowledge, you have taken many courses that have made you a well-rounded professional, as well as aware of different realities and types of jobs. You have never backed down from anything…I can only offer you my congratulations!
But now a question arises: how did you get to Cafe Ernani?

So after 18 years I sold the place, mainly because as much as I loved it with all my heart, I needed to find a more “humane” lifestyle and working hours, so it was time for a change.

In the meantime, however, I joined as a partner in a restaurant in Ibiza. At first it started almost as a game, but now I am looking forward to future developments, managing everything remotely, with the help of my partners on the ground.

And so here I am now at Cafe Ernani!

Why did you decide to change the field?

As I anticipated, I needed a lifestyle change, but at the same time I didn’t want to stray too far from my field. That’s why I decided to join Ernani as a sales agent, selling coffee and ice cream products for another brand.

Choosing Ernani specifically as a company was easy because I have known them for almost 20 years, having been my supplier at Cork. There has always been great respect on both sides, and I have been able to see and test their professionalism, growth, advice and reliability for a long time.

And for that I thank you, it’s always good to hear!
How would you describe your new work?

I must admit that I did not expect it to be like this-I thought it would be easier to get into new places, but it is not always.

I realized that to change the café in a daytime establishment, means to almost change its soul, the basis of its work, the reason why customers come in. But at the same time, when you can communicate the Brand and its values, as well as a great product that convinces immediately upon tasting, it is a great satisfaction!

So what do you expect from this experience?

To improve and make my professional figure even more complete, with everything that I am most passionate about and that can become supportive and advisory to the client!

And I am sure you will succeed, because you have already demonstrated so much!
Going a little more personal instead, do you have any other hobbies and passions?

Unfortunately, with the old way of life, the possibility of cultivating hobbies was difficult, however, I have always enjoyed motorcycles, because I love the adrenaline rush when I get into the saddle!

Then at least once a week I go to play Padel.

Another sportsman in the company, leaving me alone in the lazy group!
Joking aside, we’re almost done, just missing the “ritual questions.”

  • I would change the presentation of some specialty coffees instead, but that is actually already happening now!
  • I chose Ernani, as mentioned above, specifically because of the relationship with the corporate staff;
  • The goal is to grow and become a well-rounded professional;
  • And my favorite coffee is the Allegro, probably because I have it in my heart, having served it at my old place for 18 years!

Let’s talk first about your previous professional and educational experiences at Cafe Ernani!

Hi Martina, yes exactly as you know, finding free time is difficult, but I am glad to be able to do the interview!

Then let’s get started right away!

Let’s say that my professional career really started very early: my first job was a painter with my father when I was 14 years old.

I then immediately entered the world of “adults,” learning the meaning of responsibility, learning a practical trade. I understood what it means to “get busy,” and it all shaped me as a person.

After that I was a turner for a couple of years and went back to painting again, until I was 19.

June 31, 1991 was the date that marked my career: I became a commercial agent and maintenance mechanic.

This work has given me stability, satisfaction and opportunity.

In addition, I was able to combine customer relations, with practical work, thus offering a complete figure: able to present the company and provide essential technical service.

Then when our old boss sold the company in 2003, Luca, Claudia and I decided to take it over, thus becoming entrepreneurs of a small business in Brianza. At that time we were only involved in the distribution of roasted coffee in the ho.re.ca. channel, now we have expanded and produce our own coffee, following our own tastes and ideals.

Why did you decide to change the field?

I actually never saw it as a change in scope, I always did very practical work, where my hands built and made the final product, simply the coffee sector won. It sounds almost ridiculous and boring, but it is perhaps one of the most beautiful worlds one can know.

Then when we decided to open up production and the greatest Italian professionals came to train us, it was exciting to hear them speak and participate actively in the creation of our coffees.

How would you describe your relationship with clients?

I would say: simple, clear and direct.

Since I then started delivering, I have been able to make more meaningful connections, see them more frequently and thus know more about their problems and support them even more.

They all know very well that they can tell me whatever they need, there is trust and transparency, always!

So what do you enjoy most about this work?

My personal satisfaction in always being able to find a solution to everything and knowing coffee machines in depth by now.

Andando un po’ più sul personale invece hai altri hobby e passioni?

As a boy I was always a sportsman, from cycling to soccer to karate.

Now I have passed on the passion for soccer to my son, and I enjoy being able to follow him and see him at all his games.

We’re almost done, just missing the “ritual questions.”

Definitely what I like most about Ernani is the product and the philosophy behind it: continuous research and experimentation to always achieve something more.

And for the time being I will tell you, I would not change anything. We have already made huge changes to the organizational structure and business processes. Then of course you can always do better and we will. But for a moment I tell you that I am happy like this!

My goal is to continually grow, even after a 36-year career! Reason I had chosen this company at the time: it gave me a chance to grow professionally.

Then I would like to be joined by a young guy to whom I could pass on all that I have learned over the years.

Finally, my favorite coffee is without a doubt the Vivace!

I, too, began by learning from the experience of my older colleagues, but training must accompany this stage. For some it seems like a waste of time…I often hear, “What do I have to study to make a simple coffee that I’ve already been making for 30 years?”

Trust that you cannot even imagine the vastness of this area, and being able to discover it is the most fun part!

Let’s start now: tell me first about your previous professional and educational experiences at Cafe Ernani!

Ciao Martina!

Good talk today, I was looking forward to it too!

So: my studies go back to the scientific-technological high school. I did not opt for classical scientific because I like labs, and here I experienced chemistry and physics labs.

Then in college, the process was long: six months of Pure Mathematics and then two years of Nursing, again to have that practical work part, which I realized was crucial for me.

Even the latter, however, then turned out to be another path that was not right for me. So I retired and started doing odd jobs to support myself while I searched for the correct path.

A somewhat troubled beginning!

Yes, quite a bit. My last job was as a deli worker in a supermarket chain. It was here that I understood at least the staples of a hypothetical future job:

  • physical mobility;
  • manual labor skills;
  • With opportunities for growth;
  • in contact with the customer.

And what was missing in the supermarket?

The possibility of growth.

It wasn’t a bad environment, on the contrary, but I didn’t have the opportunity for growth and that had caused me to lose motivation.

I see! Motivation for me is crucial in work, without that I just can’t get anything done.

Anyway, now we have a picture of your previous experiences, but tell us a little more about yourself: what do you do in your spare time? Hai hobby o passioni?

My main hobby is going out with friends and being with friends. I really enjoy contact with people, I like to be able to have fun even if it’s just at a small table over a beer.

Whenever I can in the evening, after work is over, I go out even for half an hour.

Then I like soccer, both to practice and to watch. I have been a sportsman for 12 years, and even now if I get a chance, a game I will gladly play.

My last passion is manga, especially those that have battles as their main topic, they are really called battle shonen. I like them because they have the ability to cover topics beyond the more common discussions that we are used to hearing or doing on a daily basis.

I have never read a manga, but I hear more and more people are passionate about it and I am getting curious to find out more about it. You will definitely recommend something!

So we know your story and what you like. Now tell us about your role in Ernani?

Of course! Let’s cut to the chase rightly!

I am the new warehouseman and deliverer. I take care, together with Luca and Renzo, of customer management, as well as the delivery of the actual product.

We can say that my role has responsibility for logistics and proper storage of goods.

And as I said before, it’s perfect for me: it’s practical, it has movement during the day, I have the opportunity to be in contact with the customer, and I can grow within the company.

And we are happy that you have arrived. Many may underestimate your role, but if customers get the consistently flawless product, it is because of you. If there are no delays and everything always rotates efficiently, it is still because of you!

Now, always going straight to the point as I like, let’s ask the last questions, the “ritual” ones:

There are two of us then who like to get straight to the point:

  • I like the resourcefulness of Ernani; from the outside it may look like an old-fashioned small family business, but it’s not! There is methodical organization of every role and task, as well as impeccable and precise management. They have great ambition and I believe in it!
  • The only thing I would change are a couple of passages that are my responsibility, to make them just a little more streamlined.
  • I chose to come to work here because they offered me the opportunity to put myself out there and grow professionally. I finally feel responsible for something and look forward to showing what I can give. Also, I was not familiar with the world of coffee at all, but before I started the job I had to take all the courses in their Academy and discovered a huge world that fascinated me. No one would expect that behind a cup of coffee is all this!
  • Finally, my goal is to grow professionally, empower myself and develop new skills all the time.

Hi Andrea! First of all, thank you for taking the time. I already know you, but I like to be able to introduce, and also humanize, those who work behind the Ernani Brand!
Let’s start right away: first tell me about your previous professional and educational experiences at Caffè Ernani!

Hi Martina!
Of course it seems right to me to be able to present those who work behind the scenes, so as to make us more concrete and show what we do every day!
Well, I start by telling you that I graduated from the scientific high school of Applied Sciences.
Already here you can understand how much I was and am more interested in the practice of things. I like to study and understand their structure, how they work, why, but then finally being able to apply them and see them with my own eyes.
I am more concrete than abstract!
As soon as I graduated I moved to Ferrara for a year, to devote myself to a career as a professional basketball player.

We have here with us therefore a real sportsman!
Tell me a little about basketball!

Basketball is my greatest passion and for some time it is also my job. So yes, I’m a sportsman!
I started playing at 4 in Desio, a great club for all the youth teams and with them I immediately started to grow with a certain mentality: dedication, commitment and perseverance.
I participated in national finals with Desio for several years, up to becoming Serie B captain at the age of 18.
At 19 I then moved to Ferrara to finally enter A2 and then to Pavia, back to B.
In 2020 I went home after the lockdown, and at Desio I was able to put into practice everything I had learned from the upper division, training non-stop, with the aim of climbing back to A2.

How did you experience the lockdown, used to always being on the move and training twice a day?

It wasn’t easy! But I think as for everyone …
I still trained a lot at home, even if it’s not quite the same, focusing on strengthening, gym and diet.
But the lockdown made me discover coffee, so the positive side was there!

Right, you anticipated me, so let’s talk now about how you found out, how did you get into coffee?

During the lockdown, as already mentioned, I discovered the world of coffee, reading books and watching videos. I then deepened everything with some courses, both at AICAF, both at SCA, and at the Ernani Academy itself.
Once I studied, I decided I wanted to enter this world.
But how?
The bartender definitely not! I am shy and introverted and would not feel comfortable, I prefer the work behind the scenes.

But you play basketball! You’re used to being watched by an entire building!

Yes, true, but it is not the same thing. When I’m focused on the pitch, nothing else exists, just me and my teammates are there!
In any case, I wanted to be an active part of the final product, doing practical and manual work, because I would never have been able to sit at a desk for a whole day.
So the desire to become a roaster took shape!
Thanks to Ernani I was therefore able to grow, study and improve, with the support of Paolo, the head roaster.
And I also found that the task I like most of all is experimentation. Being able to continuously work on new coffee and processing methods, to always bring out the best from each bean.
And luckily in Ernani there is a lot of experimentation! So it’s perfect!

Now let’s get personal: what do you do in your spare time? Do you have hobbies or passions?

I have several hobbies outside of work.
Well obviously basketball. Although it is my other job, I feel I can insert it into “my other passions”. As already said I have been playing with it since I was 4 years old and I will continue as long as my body will hold up!
Then I like to go hiking in the mountains, when I don’t have matches on the weekend, ride a bike, try new sports or watch them on television.
I like them all or almost!
I also like animals and as soon as I move to live alone I know that I will set up a zoo at home for as many cats and dogs as I want.
Finally, I also like to cook!

Wow, in short, keep busy!
Doubt that arises in me: is it not difficult to be able to follow two jobs?

Yes, of course it is difficult, during the day I work, even if with reduced hours, and in the evening I have to train, leaving out the days when I train twice: morning and evening. The weekend I do not rest, because I have training and / or a game.
But strangely, since I started working I have practically always been the MVP (Most Valuable Player) of the weekly game, so if I continue like this, that’s fine by me!

Come on, we’re almost done! Only the last “ritual questions” are missing:
  • what do you like most about Ernani?
  • what would you change instead?
  • why did you choose Ernani?
  • what goal do you have?

Surely the thing I like most about Ernani is that he always tries to improve. None of us believe we have arrived, although we have already made a huge leap from the beginning to now, with training and continuous study.
We are always experimenting and, sorry for the term, it’s cool!
I don’t like the organization on some processes, but that’s right, we are relatively new and we are starting the streamlining and reorganization process.
I chose Ernani for these reasons just described, but also because it is a reality close to me, which I had already known for some time.
I’m to grow and learn as much as possible from this world and especially about roasting, in order to give the customer the best possible experience.

Tell me first about your previous professional and educational experiences at Caffè Ernani!

Sure, let’s get started right away!

As a teenager I was studying as a surveyor near my home in Siena, but I immediately realized that sitting all day in class was not for me.

From an early age I had the need to feel independent, I had to “get my hands dirty” and be able to achieve something, creating my own path.

This led me to drop out of school in the third year and I immediately started working.

A possibility had opened next to my sister as a hairdresser, we wanted to grow together and get to open our center.

But unfortunately I discovered an allergy to nickel, a substance present in almost all products in a salon, and I had to reconsider my plans again.

At this point I opted for another profession that fascinated me: the barman, starting to do the evening. Even here, however, I still did not feel in the right profession, it was a job that did not satisfy me.

And here is the turning point: daytime barista in the cafeteria! I had found my path!

So this is how your career as a bar manager started!

Actually yes, but I didn’t know it yet. To understand that I wanted to grow professionally, another shock was needed.

After 5 years everything had become routine, I had turned off a bit at work, I had no more stimuli and I had lost determination.

So I decided to change and move to London, first to learn English and then to have a life experience.

I thank myself every day for having the courage to make this decision, because without London I would not be where I am now.

This is where I really grew up: I started as a warehouse worker and within 5 years I became a store manager and lead a team of people. I understood that the work should not only be the mere achievement of the salary at the end of the month, but that it could be more and above all I could do more!

Courage is an understatement! It is my secret dream to spend a year abroad, but I always find some excuse to postpone! I appreciate your determination and I admire you for what you have managed to learn.
So how did you come to Ernani’s?

Between Brexit and the global pandemic it had become more difficult to stay in England and continue working, so I returned to Italy, but with a new spirit, with the awareness that I had learned a profession and could take it with me!

Then one evening, completely randomly, I met you: you ordered me a drink and we started chatting… and here we are!

Yes I remember that evening! Absurd the coincidences of life, moreover we met in Val d’Aosta!
But clarify a doubt: how did you understand that this was really your job?

I know this because it is the job that unites the two worlds I want to live in: one is the frenetic and sociable one at the counter and the other is the more serious and stimulating one in the office.

Being a barista means being the staple of your customers’ daily lives. Every morning they come by for breakfast and they want to see you and say hello. This fills me with emotions, I don’t know how to explain it… I know we don’t save lives, but we make people smile and it’s enough to love this job.

Then comes the second part, more sedentary, where I take a breath and relax from the frenzy, but which at the same time requires great concentration and attention. Everything must be methodically organized for time and precision, nothing can be left to chance. Every day new ideas are needed to offer customers an improved product and service. Together with the objectives set by the administration, it is truly stimulating!

I understand you, I have now completely moved to the office side, but sometimes being able to spend a few shifts behind the counter is always nice! It takes you back to basics and reminds you of the purpose of our work: to satisfy customers!
Now a more personal question: what do you do in your spare time? Do you have hobbies or passions?

Surely when I am able, I insert some physical activity.

Then I really like animals and I dedicate a lot of my free time to them.

Finally, I am a football and basketball fan, I do not follow all the games because my lifestyle does not allow it, but as soon as I can I watch any game that comes my way. I really like watching the sport itself, not necessarily just my favorite team.

We are almost done, only the last “usual questions” are missing:
  • What do you like most about Ernani?
  • What would you change instead?
  • Why did you choose Ernani?
  • What goal do you have?

I certainly like the philosophy of the company which always and in any case focuses on quality, rather than quantity. I myself want to carry on the concept and become an ambassador of Ernani’s values.

I like the youthful and enterprising environment, with an inexhaustible desire for improvement of both products, services and the workplace.

In Ernani I have the opportunity to grow and make a career, as well as the flexibility and availability of the entire administration.

Then of course I like the colleagues of the roasting company, all available from day one and excellent bartenders from whom I am learning a lot.

I would only change one side of the mentality: I would take away the feeling of family even more. It is actually to be appreciated, because when you enter Ernani you are not a number, but you join the team, like a new member of a small family. But for my vision of the times even less availability and more coldness is needed.

I am sure that over time we will balance well with the administration!

Finally, I chose Ernani precisely because, as I have already said, I can make a career, my goal was to take an Italian coffee shop and bring it to grow. Ernani was starting this process, so why not do it together?

And I am happy that even in Italy there are places like this and not only abroad!

The choice of the name “Ernani” was due to one of the founders of the roasting company: a great fan of Opera and especially fascinated by Giuseppe Verdi’s opera of the same name, Ernani.

He imagined that the values represented metaphorically in the work’s admittedly unconvincing story, namely courage, visionary spirit and desire for revolution, are the same values we also wanted to convey through our coffee. A boundless desire to start from the Italian espresso tradition, but breaking the mould and offering something different and unique.

But who was Ernani?

As mentioned above, Ernani is the main character in Giuseppe Verdi’s opera Ernani, from a libretto by Francesco Maria Piave.

The drama takes place in 1519 Spain where the bandit Don John of Aragon, aka Ernani, in order to claim the murder of his father, is leading a revolt against King Charles.

Ernani’s revolt fails and the rebel, disguised as a pilgrim, takes refuge with Silva.

Silva, great of Spain and Elvira’s uncle, is also the woman’s betrothed. King Charles is also in love with Elvira, but she reciprocates the feeling only with Ernani.

King Charles, in pursuit of Ernani, arrives at the castle, but unable to find Ernani, asks Elvira to follow him. In order to protect Elvira, Ernani in despair decides to tell Silva that King Charles is also in love with his niece and asks for help in vindicating Elvira’s offended honor.

Silva agrees and Ernani sanctions the pact by giving him a hunting horn: when Silva wants Ernani dead, he will blow the horn three times and Ernani will take his own life.

In the third act, set in the dungeon of the Aachen chapel, right on the tomb of Charlemagne, the conspirators gather, led by Ernani, but anticipated precisely by Charles who claims the imperial throne and decrees the death of the two: Ernani and Silva .

At this point Elvira intervenes in defense of Ernani, who pleads with Carlo to spare her lover and her uncle.

Charles relents, even agreeing to the marriage between Ernani and Elvira.

At this point, however, irate Silva meditates revenge for his just-shortened marriage to the woman.

The fourth act thus begins on the terrace in Ernani’s palace, where the bride and groom’s party is in progress. At one point, however, one of the servants notices a man dressed in a black cloak and masked, with an angry look and a stealthy attitude.

And at the moment when Elvira and Ernani finally exchange eternal love, the sound of a horn is heard. Ernani instantly understands, mindful of the oath made with Silva, and pushes Elvira away. With his mask off, Silva unveils himself and reminds Ernani of the pact.

Ernani, true to his word, is forced to keep his oath, so he grabs a dagger and kills himself.

Caffè Ernani is part of Italian espresso history, thanks to the Torrefazione in Corso Buenos Aires, 20.

Ernani’s story began right within the walls of the roasting plant!

The History of Ernani Coffee Roasting

The Torrefazione in Corso Buenos Aires was opened in 1909, amid revolutions and great industrial and economic progress.

At that time, thanks in part to the improvement of the espresso machine, a real coffee culture began to spread.

The roastery thus became a reference point for lovers of roasted beans and stands out for the passion and dedication it manages to extract in each cup of coffee.

All this is also reflected in the present day, considered one of the most prized and renowned cafes among the Milanese.

This we can also read from the words of:

ViviMilano, who writes: “A historic roastery in the heart of Corso Buenos Aires, it has been a landmark for coffee lovers since 1909. Among the house specialties is Blue Diamond, coffee that has made roasting history, alongside research blends and single-origins. It also offers a selection of high-quality made-in-Italy chocolate, jams and cookies.”

I know a place, a blog that all of us at Ernani follow passionately states, “It was 1909 when this roastery opened on Corso Buenos Aires, and more than a century later, Ernani is still going strong to spread coffee culture in the city. Seeing the care and attention the baristas give to the preparation of their medium roast will make you realize, even before you bring the cup to your mouth, that this is the right place to enjoy one of the best coffees in Milan.”

And we couldn’t be more proud!

More, The streets of Milan reads, “The Ernani Coffee Roasting Company is not just any coffee roasting company, but it is a historic roasting company that is more than 100 years old. Its very strategic location on Corso Buenos Aires has made it a convenient meeting point.”

And finally, Milan on tour dedicated an entire article to the roasting company:

“Caffè Ernani is a historic roasting house located on the Milanese street that best represents the rise of the city’s powerful 20th-century middle class: Corso Buenos Aires.

We are in the early 1900s in a Milan in ferment and projected toward the future.

Just think that at the time, one of the latest innovations in Food&Beverage was the espresso machine, a true marvel for all coffee regulars at the turn of the century.

And it was in this unique and sparkling atmosphere that, in 1909, a historic store opened its doors that we can visit even in our own day: Caffè Ernani.

Imagine: the entire Corso Buenos Aires was overwhelmed by the aroma of roast coming from the Ernani Roastery, enticing passersby to enter and discover the owners’ great passion and dedication to coffee.

This magical atmosphere can still be felt inside the historic roasting house. In fact, the coffee is freshly ground and custom-made for the customer, as was done in the old Milanese stores, filling the air with incredible aromas.”

As we can read, Within its walls has been consumed the history of Italian espresso , passing from the primitive espresso machines, which offered a coffee similar to that of the moka, to the present day, where the most advanced technologies are mixed with the most unbridled passion and a deep knowledge of the raw material.

The passion for this drink has not yet exhausted itself and never will!

Over time undoubtedly there has been a succession of differently flavored and differently brewed coffees, but each blend created and served has always reflected the tastes of cup lovers .

The common point of all the coffees served from 1909 to the present is precisely the continuous quest for exceptional coffee.

Over time, techniques were refined, the knowledge of the roaster, namely Paul, improved, and more and more fine raw coffees were selected in order to offer only the best!

What is the role of the roaster?
One of the most immediate answers is, “The roaster’s job is to roast raw coffee.”

And that answer is right! But isn’t his role broader?

In my opinion, no!

As you know, the coffee supply chain is very long, consisting of dozens of different links. The roaster is the link that binds the plantation to the bartender.

Each step is critical if a quality cup is to be achieved. Even one mistake by one of the actors in the supply chain lowers the quality of the extracted coffee, which cannot be raised in subsequent steps.

In this sense, therefore, the roaster has several responsibilities in chief.

One of these, perhaps one of the most important, is to value the work done by those who intervened earlier along the supply chain and especially that of farmers.

Let me explain: we roasters have to select and purchase raw coffee, so that we can then roast and sell it.

The key word in this case is “select”!

In fact, all coffee is not the same; there are dozens of different variations and thousands of plantations located throughout the tropical belt. As a result, each plant from each plantation develops a different sensory profile.

In addition, plantations have different operational processes. Some may decide to focus more on quantity of grains sold, others more on quality. Exactly as it happens in every industry and in every business.

It should then be remembered that the roaster in most cases does not buy coffee directly from the plantation owners, but from the importer, the crudist, i.e., a figure who takes care to personally visit the plantations and verify the modus operandi and the quality of raw coffee produced, and then propose samples to the roaster to taste and select.

The importer and the roaster must work closely together and in a regime of complete trust. However, the roaster must be able, through courses and various studies, to verify the actual goodness of the coffee tasted and thus be able to choose the best coffee possible.

So far, therefore, we have seen that the roaster has not merely the task of roasting raw beans, but must also have focused and precise olfactory, gustatory, and selective skills if he or she is to deliver a quality cup.

Only now comes the task of toasting.

Roasting coffee is an art, just as it is for the pastry chef in his workshop or a chef in his restaurant.

The most fascinating thing is that there is no one way of roasting, no one roaster, no one result. All of these are variables that indelibly affect the coffee extracted. Not to mention the roaster’s skills and training in the field.

Also, unlike what you might think, the roaster does not create a coffee’s flavor profile from scratch. In fact it is already all encapsulated within the raw beans, and comes from the terroir in which the coffee was grown and the processing methods of the plantation.

The real role of the roaster is therefore, as mentioned at the beginning of the article, to enhance the quality and merits of the raw coffee purchased, choosing the most suitable roasting level, which brings intensity and a wide range of aromas into the cup, enhancing precisely the work of those who come before him.

But it’s not over yet!

The roaster has two other responsibilities:
  1. Stocking and storing coffee in the correct way
  2. Training the bartender

Storing coffee is just as important as all the previous steps. Try to think of having a near-perfect coffee in your hands and ruining it because it was not stored well. Perhaps because it was left in contact with oxygen, or because it was made to “sweat” in a warehouse with too high temperatures, or even because you have packaging that is now years old.

The work of years is ruined by small oversights.
