You joined the team in October 2023. In these months you have already demonstrated so much and especially your eagerness to learn.
Now I’ll ask you straight away: what are your first impressions?

Hello to you too Marti, so I will finally have my own page on the Ernani site too!

You may have heard these things from my colleagues before, but it’s the truth, so first impressions were positive, the team in fact is super friendly, welcoming and open. No unpleasant situations are created, as often happens in other venues, of hazing or exclusion of the latest arrival. In fact, it is quite the opposite here!

In fact, I enjoyed the work from day one, thanks in large part to my colleagues, as just mentioned. I felt in no time that I was competent and ready to tackle counter or cashier work with total autonomy.

In addition, the hours are flexible and the work during the day is dynamic, I could not ask for more to balance work and personal life.

A thousand times thank you for your words. You are smart and that cannot be denied, to then hear your respect and pride for being part of such a cohesive team makes me proud too!
It took us a long time, but we did it!
Coming back to us for a moment, what were the jobs or experiences that brought you here?

On this question he assures you that we do it quickly!

In fact, I am class of 2003, so I have not accumulated a lot of experience, but still they have already left me and taught me something useful.

I began my journey by graduating from the Sant’Ambrogio Professional Institute for Commercial Tourism in Milan.

Here the main themes were economics and law, as you might guess, aimed at understanding the Italian tourism industry.

I am to this day still very happy with the choice I made and with my address, because at the end of the day it is the area in which to this day I work and I am doing well. In addition, it allowed me to look at it not only from a practical point of view, but also and especially from a bureaucratic point of view.

So now in good mind the internal logic of the industry.

Soon after my first work experience was as an animator at a summer camp. Here I learned how to approach all kinds of people, of all age groups, as well as the management of a group for full days.

There were many responsibilities, and I realized that I also enjoyed having them!

After that I was only a waitress for a couple of months in a restaurant on the Navigli in Milan. Here, too, I developed and improved my communication skills, customer approach, food sales and communication with tourists and foreigners as well.

As short-lived as the experience was, it had left me with much to think about.

Finally, I concluded my previous experiences by working one year in the clothing store right across the street from the Ernani Roastery. I used to be a cashier, and what she taught me were always the same topics mentioned above, especially delving also into cash management, which is too often taken for granted, but requires great care and precision.

Here this latest work has really left me with an attention to detail.

You are very young, but already with nice background, which made you realize early on the precision and attention that professional work requires.
So how did you get to Cafe Ernani?

Unfortunately, in the last company they made staff cuts, but since we are all customers here at Cafe Ernani, I immediately noticed the “staff wanted” sign. My former employer also recommended me to Fabio, the former bar manager, who immediately scheduled my interview.

First and foremost, I needed to work, as one of my personal goals is to grow quickly in a job I liked. Plus Ernani seemed like a very good company and I wanted to try to do this work as well!

Here in fact I could learn another role, the counter and espresso machinist, as well as deepen my cashier and sales skills.

I wanted to try, so here I am!

I am happy about that! Also because this work, as stressful as it can be, is dynamic and energetic. You get to know so many people and have the opportunity to grow. I had made the same choice at your age!
Having arrived here, I then ask you about your goal for the future, although you have already hinted at it in part.

At the moment I don’t actually have a specific goal in mind. As I told you, I am young and I still have to figure out my path well.

Of course in general I would like to grow within the restaurant world, and then get to apply the business part that I learned theoretically in school as well.

So I would tell you that I would like to become a figure with even an office part during the day, with more responsibility and slowly detach myself a little bit from customer contact. To date, it is a part that I really enjoy, however, I would like to experience more of what happens behind an activity as well.

True! Customer contact is always nice, and when you are also good at it you really get a lot of satisfaction and compliments. Just as good, though, is the management and administrative part, when you realize what a company really needs to function and be sustainable over time. You feel more inside the “gears” we can say.
If you don’t mind now, while we’re on the personal side, I would ask if you have any hobbies or passions outside of the coffee shop.

Actually I don’t have many hobbies, I don’t play sports at the moment, and I don’t have any extra-work activities.

Most of my free time is spent hanging out with friends and going dancing. I like to experiment, have new experiences, discover the world, try new places and restaurants, and be surprised by what I don’t know yet.

I wish I could enjoy this age as much as possible!

In the past I played a beautiful team sport, volleyball, which also taught me a lot, which is useful for current teamwork. Supporting and helping each other to work cohesively is in my opinion the key ingredient why the work is going so well for everyone!

To conclude, and then I’ll leave you to your work, I would ask you the usual usual questions:
– What do you like best about Ernani?
– What would you change instead?

Here I admit that you catch me a moment unprepared.

I definitely like the fact that I come to work with a smile and willingly. It is never a burden; in fact, sometimes I really enjoy it!

These feelings always make me feel equal and comfortable, both with colleagues and clients.

Also learning I am always doing it willingly, because everyone who has more experience than me in the field is leaving me so much, and especially valuable notions and knowledge, which I will definitely apply in the future anywhere else.

While I’m honest, at the moment I wouldn’t change anything, I don’t see and haven’t noticed any striking things that I would like to change in the immediate term. I am satisfied and happy with things as they are now.

However, I would like to conclude by sharing the latest news: I have just been brought to a permanent contract, the realization of my first professional goal.

I am happy to have achieved it with Caffè Ernani, and I am satisfied that I got there so young.

Now I want to celebrate!!!

Hi Martina, but you’re welcome, thank you! I will also finally appear on the Ernani Coffee site!

Yes exactly, I have been here for about two and a half months, and what I have found is a close-knit and united team. The boys are all trained and educated in cafeteria and customer service. I must say that I found an optimal situation from which to grow further.

On the other hand, on the part of the company I immediately had trust and great helpfulness. You have from the very beginning included me in the workforce 100%, speaking to me in a transparent way.

Only with colleagues in the beginning did I receive some mistrust, but this is normal as I came in with an intermediate role between colleagues and administration, namely Bar Manager. But, as you said, having demonstrated from day one my abilities in fulfilling the role assigned to me they slowly opened up and trusted me.

Overall, therefore, it was a very good first impression.

You are smart and this cannot be denied, in fact both we the administration and colleagues have respect and trust in you. All this then you acquired in just a few months, so congratulations!

Coming back to us, what were the jobs or experiences that brought you here?

Be prepared because my story is long, I am someone who likes to change and grow fast!

I started from a Professional Institute for Tourism, as I was from Puglia in fact I would have many job outlets for the future.

After a few experiences in hotels, which, however, did not excite me much, I immediately started with my career in the coffee industry.

My very first summer job, while I was still in school, was as a bartender’s helper at a bar below my house in Bisceglie. Here I first approached the world of coffee as a counter and waiter.

The type of work appealed to me right away, even though I was still unclear about what I wanted to do in the future.

After this initial experience, I worked in 3 other cafes in my city, in which each owner or colleague increased my experience in the daytime cafeteria business.

In the first of the three I was even in the car finally!

After that I left the field momentarily to join the Armed Forces. This was perhaps one of the experiences I most enjoyed. First, because I thrive in hierarchical environments where order and scheduling of roles and tasks reign. In fact, it was here that I was able to learn humility, order, being autonomous, and precision: lessons that I carry with me constantly.

I later went to work as a vice restaurant manager in Abruzzo, expanding my knowledge to the world of wine and cocktails.

In fact, here, rather than serving the dishes, I was really serving the drinks, wines or drinks, beginning to understand catering in general and no longer related only to the day job and the cafeteria.

Although honestly, work in the cafeteria in my opinion remains the best, both because of the lower physical and mental stress and the opportunity to better balance work-life balance.

After I finished my restaurant experience, I first moved on to the pastry shop, in which I also did a little bit of training in the laboratory as well as being responsible for the cafeteria. Experience that left me with more knowledge about the products, their quality and freshness.

During these months I decided to enroll in the AICAF Coffee Academy, completing the entire training cycle and becoming a Certified Coffee Master. For me, in fact, it is not enough to work in a mediocre or sufficient way, if I decide to invest my energies in a field I want to know it, I want to be motivated by it, I want to find interest and increase my skills.

Then I switched to the evening world again, being a store manager in a wine shop, and for the same reason that I took the AICAF courses, at this stage I took the classes and took the exams to become an ICE Sommelier.

To conclude the whole catering industry, I did not miss a thing, even working in an artisanal ice cream shop. Although I stayed very little, having moved to Milan after finding love! (yes I am a romantic)

Here in Milan, I first worked for a well-known and important roasting company, as a supervisor in one of its locations for two years. Perhaps one of the most formative experiences in the areas of cafeteria culture, personnel management, and organization of administrative functions.

But I still wanted more, so here I am at Café Ernani as a Store Manager!

Wow, okay experience you have, the fear of changing jobs does not exist, while your curiosity and professionalism has no limits!

I don’t know in how many lifetimes you have been able to do this, but congratulations indeed for your path and achievements.

So how did you get to Cafe Ernani?

As you know, I was looking for work for a change and especially to grow in level.

On Indeed I found your recruitment ad. However, right after the first email we closed contact because you were looking for a bartender, while I was looking for a Store Manager role.

Lucky for me, however, Fabio, the old Bar Manager, just the week after my interview, decided to quit his job to start a new experience and contacted me again, this time for the real role I wanted!

So here I am on a huge c***, as they say!

It is so true! In life we have to be competent and professional, but every now and then luck gives us a good boost!

Having arrived here, I ask you if you have a goal for the future?

My life goal, besides expanding the family, is to be comfortable where I am now, and to try to grow this company to grow along with it.

Finally further deepen my knowledge of coffee, as the company gives me the opportunity to have in-depth and comprehensive training.

If you don’t mind now, while we’re on the personal side, I would ask if you have any hobbies or passions outside of the coffee shop.

The first hobby is definitely biking-I love it so much and do it constantly from spring to fall. I usually go to the Martesana and ride it all the way to Cassano d’Adda, or I go to Monza or Pavia or however all the most beautiful cities around Milan.

Secondly, I like to bake, especially cakes: muffins are my workhorse. On the savory side, however, I’m putting my money on Cantonese rice, although I’m now specializing in vegetarian meatballs at my wife’s request.

Finally, DIY. It is indeed difficult for me to call a technician to do housework or repair something, I really have to be desperate to do it!

I like Bricolage so much too! Assembling furniture from Ikea is one of the most fun times of the year (yes I am a nerd)!

To conclude, and then I’ll leave you to your work, I would ask you the usual usual questions:

  • What do you like most about Ernani?
  • What would you change instead?

The thing I like most is the Brand and what it wants to communicate: culture.

This is also reflected in the huge variety of coffees available to customers, both for the endless tastings that can be done and the fun of learning about them and selling them.

While, it will go without saying, but I would change the layout of the venue and the customers’ bathroom to some extent, but unfortunately I am equally aware that there are no other solutions…

Yes, that’s right, unfortunately being a historic venue we have our hands tied in 90% of the cases.

However, you also already captured Ernani’s soul: the desire to popularize, the interest in the customer, the energy in innovation, and the desire to experiment.

Hi Marti, thank you for doing the interview with me too!

So my first impressions were really very positive. The colleagues proved to be professional and above all competent from day one.

It seems strange to say, but it is rare to find an establishment in which everyone knows how to work, knows the raw material and all stages of extraction, and above all is aware of the importance of service to customers. In fact, they are always kind and welcomed me from day one, like family.

Furthermore, when you ask a question they always know what to answer and how to explain both the job and the product.

Thanks to them I learn something new every day, and this motivates me to keep going and discover more and more information about the world of coffee, to reach the same level as them or even surpass them!

Wow! I see that you have enormous respect for your colleagues and your work. Your love for this profession shines through and it is clear that you were looking for the right coffee shop to express it!
Just out of curiosity, can you give me some examples on the things you were taught!

Of course!

For example, I understood that you can learn a lot from a coffee bean and that most people don’t know it at all, despite believing the opposite. I can say this because I thought so too, but I had to admit that perhaps my knowledge was not enough to treat him with the respect he deserves!

I have learned that there are a thousand variables that can spoil the product, and we have a responsibility to maintain its high quality, from transportation to storage to the roasting, blending, extraction and serving stage.

Another thing they taught me is the knowledge and preparation of all the other alternative coffee extraction methods to espresso, namely Brewing methods. In fact, I look forward to coming to your Lab again and taking the dedicated course to learn how to use them all to the fullest!

I am more than happy to wait for you! You know, when you tell me that you want to take more courses and learn more, it fills my heart! To work well, as you know, you have to study and then put everything into practice!
Coming back to us, is this your first job? Most importantly, is this your first job in a coffee shop?

No, I am actually on my second official job, although I have previously done several internships with the school.

Like Cristian in fact (colleague at the roasting company) I graduated from the Carlo Porta Hotelier Institute in Milan, specializing in cooking.

After a couple of internships, however, I realized that the kitchen was not the right environment for me: the hours are grueling and the work even worse, and it all gets worse when you are a shy kid.

So after I finished school, I started sending around resumes a bit randomly, as a barista, receptionist, assistant, clerk, cashier, etc. One day a well-known supermarket chain called me to take care of their in-house cafeteria. I accepted immediately.

They were the first to educate me about the world of daytime administration. This gave me the opportunity to grow, become a professional, work my way up and understand the dynamics of working with both clients and colleagues and administration. I really have nothing to criticize; they have always been impeccable toward me.

Moreover, this first experience literally changed me as a person!

I used to be weak, unsociable and shy, very unsure of myself, but thanks to public contact I am now more confident and my shyness has practically disappeared.

I will never stop thanking this profession for changing the personality for the better!

Well, so one venue before Ernani, but one that revolutionized your life, gave you drive and passion, shaped you, made you realize what you want to do and who you want to become in life. You really got off on the right foot!
Congratulations because being aware of this at your young age is not for everyone!
Taking a step back instead, tell us how you came to Cafe Ernani.

As I told you in the previous work, I always got along very well. The problem started only in the last few months when there was a bit of staff change and all the new colleagues were young and uninterested in learning and unmotivated in improving themselves. By this time there was no more confidence and it was time to change and look for new positive stimuli.

So I started looking for jobs online and found your ad on Indeed. Fabio called me to do the test a couple of days later.

He liked me very much and I liked him very much.

It quickly made me realize that here at Caffè Ernani, harmony in the team is very important and that we consider ourselves a family. In addition, you would have trained me further and I would have had a chance to express myself as a professional–that was exactly what I was looking for, so here I am!

I am glad to hear all this, every now and then chance brings us figures like yours who are extremely knowledgeable and passionate about this work. You should never let them get away, and Fabio (bar manager) always sees right through this!
Whatever you want to learn and deepen, you know very well that we are here for this and it can only make us happy to receive questions from those who want to make this job great!
Having arrived here, I ask you if you have a goal for the future?
In the future I would like to open a club with my brother, who is currently working as a bartender in London.

Before you say anything–I know, it’s very difficult, especially in Italy, but dreams are dreams and above all, never say never!

In addition, we could offer a really broad service, from breakfasts, with me in charge, to aperitifs and beyond, thanks to precisely my brother.

We will see how the future goes!

But regardless of my dream over the years I have realized that I want to stay behind the counter, because this is what I love to do!

As I told you, this work has already given me so much, and I feel an obligation to repay it.

Another time wow! Determined, assertive, knowledgeable, professional, clear–in short, you’ve got it all!

No problem!

I have three great passions: the first is definitely playing basketball with friends at the little park, or with my father. This sport has always connected us very closely.

Then ride a bike. If I can, I prefer in the mountains, either along roads or dirt trails.

Finally, I love traveling, meeting new places, meeting people, tasting new tastes and being amazed. Unfortunately, the only drawback of this job is that it doesn’t leave much time to leave, but I always try during the year to carve out moments to get away.

Do you already have a destination for the next occasion?

Of course!

I would very much like to be able to go to America, first of all to see New York, and then we will see where my instincts take me.

Well, so we have another sportsman, passionate in team play but also about nature and discovering new things. Great!

The thing I like most is, as I said, the relationship built with colleagues, I think almost unobtainable in any other workplace.

I was also amazed then by the antiquity and atmosphere inside the café, as if I were transported to a Milan of another era. Moreover, working in such an environment gives me feelings of prestige!

I would still change the furniture arrangement, however, so as to create more space and also be able to get some seating inside.

I would also like to have a way to prepare and serve some different extraction methods as well, but currently I do not see where and how that is possible.

However, I also know that you are already working on it, so I look forward to the results!

Finally, I would like to be able to grow with the company and if there is a way someday to move to a new venue also signed Ernani, more modern and with different offerings, but in which there is always this “vintage” and historical atmosphere.

First impression: all very good!

Colleagues are a treasure: calm and loving, they never miss an occasion to ask if you need help or support.

Nowadays finding people who really want to team up, not only in words, but in concrete deeds is really rare. Finding it was therefore a surprise for me.

Not to mention the customers who feel like family.

Every day they come in and say hello and ask how you are, they make you feel good. They are so kind, thoughtful and welcoming that they make your day and motivate you day after day.

Thanks to all their compliments and their warmth, you can understand that you know your job and you know it well! There is nothing more rewarding.

And I can guarantee that this climate cannot be found anywhere else.

Now I can say I’m fine!

I have tears for the joy you are giving me. You’ve all been telling me lately how happy you are with the climate, colleagues and customers and I’m the first to feel this mutual support.
I can’t even explain how happy I am to be able to work with people like you, who do it day after day with a smile!
Back to us, have you been a bartender before? Want to tell us a little about your story?

I’m young, so I don’t have a lot of experience behind me, but I’ve done a bit of the apprenticeship too.

I started as a waitress in an All You Can Eat, a job that may seem similar, but in reality it has nothing to do with it. It was literally a bloodbath, there was no motivationnor training. I was not a professional, but a pack animal. The important thing was to run all the time, without being able to explain, tell, be courteous to the customer or even just smile.

Then I moved to the bar side in a completely different place than this.

In general I think that every bar is a world apart and as I said, I like Ernani because here you MUST know your job. Everyone is, or rather we are, trained and aware of what we provide to the customer and how we serve him.

In the other bars, on the other hand, most of the owners and colleagues think they know how to do it, but in reality they really don’t know what they are talking about and consequently they work badly. However, they expect you to work like them and if you don’t adapt, they continuously mortify and criticize you, making the job heavy and frustrating.

Here in the Torrefazione colleagues are just the opposite. If they see that you make a mistake in some passage, they immediately point it out calmly and patiently, then explaining why it is wrong and how to improve it, so that you don’t make the same mistakes again. Always in a very constructive way of course.

This is priceless!

Here I can express myself and become a coffee professional.

I also think that if we improve and work well, the place grows and so do we!

You already said everything right, I don’t see what else to add! I absolutely agree: professionalism, love and dedication are our fuel. If we all work in harmony, it’s even better.
Taking a step back instead, tell us how you got here from Caffè Ernani?

I first found you by accident. I was looking for a new job and your barista search ad for the Milan roasting company came up and I immediately sent my CV.

My sixth sense told me it was worth it.

Then you called me for the interview and when I arrived I realized that my sixth sense was right!

You should know that I come from El Salvador, an enchanting state in Central America, also famous for the production of coffee. My own grandparents own a small plantation. Having grown up there, coffee has always attracted me.

When I walked in and saw a whole wall of different single origins and blends I was amazed. Then I saw that in that month we also had a single origin Specialty Coffee for sale from El Salvador and… that’s it, you won me over, I wanted to work for Ernani!

El Salvador coffee will definitely come back!

Now I’m therefore curious to know your goal for the future. What you would be when you’ll “old”?

Until recently I didn’t have much idea, but thanks to the newfound serenity I finally made plans for my future.

I would like to continue this work in part, but starting up on my own, with a new and innovative place that combines two of my passions: drawing and coffee.

Indeed, I would like to inaugurate a tattoo bar one day, in which it will be possible to breathe the two worlds. A room of the right size that allows me to pass on my passion to others.

I will be your first customer either way!
Seriously, it seems to me that the project is very interesting and above all fresh, you I wish to reach it!
So we can say that another passion of yours besides coffee is drawing. Do you have others too?

Yes, exactly, another great passion of mine is drawing everything and with all techniques, even if my favorites are pencils on subjects concerning nature or astrology, following a surreal imprint.

I would also like to learn to tattoo over time.

But another great passion is football. From an early age I remember that I didn’t love playing dolls, but I preferred to go down to the courtyard with my brothers and friends and play with the ball.

For a short time I was also in a national women’s soccer team in Italy, but due to work commitments I stopped. Now I get to train at the park a few days a week. Let’s say that even if I have reduced my commitment I never stop loving football and training!

What a pussy you are! Multifaceted and full of facets. You can love nature and the peace that drawing instills in you, and then immediately become competitive and fierce with a physical sport. You are fantastic!

There are actually two things I prefer: the quality of the product and the way it is worked.

When I tell customers that ours is a quality coffee, I am 100% sure and certain of what I am saying, because I can demonstrate it, I can explain it and I know what we do.

I repeat: if they ask me“Why do you say it’s quality? How does it differ from the others?”I can answer and try it, especially when tasting it.

Then, as already mentioned, we know how to work it to continue to maintain high quality even in the extraction and service phases.

I will never stop repeating that Ernani breathes professionalism, a rare commodity to find these days.

What I would change instead is the style of the place, but I know you already have plans for it in the future, so I look forward to seeing how it will become!

The first thing I thought was: “There’s work to be done here and I really have to commit myself”.

It may seem that I was not happy, but it is quite the opposite.

I immediately understood that this job and this place would give me many challenges to overcome.

In this place I started getting serious, and I’d say thank goodness!

I understood that I wanted to become a hard worker: experienced and professional!

Overall, in fact, now I tell you that I like everything: the days go by quickly and every day there is a way to learn something new, without ever getting bored.

Finally, what motivates me most is the contact with the customer, being able to talk to people, discussing.

Not to mention the colleagues who have welcomed me, taken me on and made me grow with such perseverance and patience.

You’ve all been telling me lately, I’m happy to feel this climate of mutual respect and friendship!
Then hearing how the “old generations” welcome you “new” ones to make you grow, teaching you the values ​​of this job is priceless!
Returning to us, didn’t you expect it to be so “tough” because you’ve never done this job before?

Let’s say that I started from the Hairdressing Diploma, but unfortunately I lost interest in the world of hairstyles, so I threw myself into something else.

The only other job I’ve ever had was at a well-known fast food chain and it was completely different.

There are no well-defined roles there, or rather they exist, but all of us on the staff work continuously. So it’s hard to get really good at something if you have a new role, responsibilities and tasks every week.

While here in Torrefazione Ernani I have the opportunity to specialize in certain tasks and get to know them in the most in-depth way possible.

Then it’s true, I didn’t expect it to be so dynamic, but I already knew it in part. In fact, my family has always had great experiences in this business and the stories or anecdotes at home have never been lacking!

Young and determined… congratulations!
And I also confirm that yes, I too grew up in this world a bit, but hearing stories and experiencing them firsthand is a completely different thing. I remember how shocked I was by the difficulty of this job, which at the same time gives joy and many recognitions. An aspect that many underestimate.
But taking a step back, tell us how you got here at Caffè Ernani?

As almost all my colleagues a bit by chance.

I was looking for a full-time job and thanks to word of mouth I have been introduced to you.

So here I am ready for this new adventure, even if it started six months ago.

Simple and painless!
Now I’m curious about your goal for the future.

It will seem really strange to you, but my main goal is to be able to get to work with children. Partly because I love them madly and I adore being in contact with them.

Then because I think that educating and watching little humans grow up gives you unique satisfaction!

I’m still far from reaching it, as I stopped my studies for a moment to dedicate myself to work, but I’ll start again as soon as possible and I’ll be able to reach my dream, I’m sure of it!

I wish you to get there with all my heart. If you have a specific goal in mind you are already halfway there, now you have to work to achieve it!
So we can say that contact with people and in particular with children is a bit of your passion. Do you also have hobbies?

I don’t have many because I spend most of my time with my friends and family.

However, I like to dance, even if I stopped taking lessons since September 2022, and go to the gym.

In general I consider myself a sporty person, who loves being on the move and finding satisfaction in overcoming my limits.

It shows! I don’t think I’ve ever heard you say “I’m tired” once, thanks to your desire for life!

As already mentioned, and as I also read in Cristian’s last interview, we all agree that the team is the best aspect.

They are all wonderful and I don’t even know how to explain it, but they are wonderful people, patient, cooperative, supportive, etc. I couldn’t ask for anything different or better.

While what I would perhaps change is the possibility, even if I know that today there is no space, of being able to have seats and tables inside the cafè, to allow customers to sit down and above all to be able to dedicate themselves in a better and more relaxed way to cup lovers.

Hi Christian! First of all, thank you for taking the time to interview me.
You joined the team in February 2023. In recent months you have had the opportunity to settle in, get to know and make yourself known to colleagues and customers.
Now I ask you cold: what are your first impressions?

The very first impressions were sincerely a bit negative: the team was detached and interpersonal relationships cold, as well as a general nervousness, which is normal during working hours, but sometimes excessive.

The thing that surprised me though is that after two months everything has changed!

We united, I discovered a professionalism never seen before and a knowledge of one’s work so exhaustive to the point that it intimidated me a bit.

To date, this professionalism on the product and towards the customer is what has made me grow the most. I tried to absorb every single piece of information to treasure it.

Some new ones are still in the making, but no one has ever backed down to improve!

I’m so happy about it. Recruiting and hiring personnel is never easy, but feeling that we have succeeded is a great joy and a great credit also to Fabio, the Bar Manager, who made it happen.
Back to us, is this your first coffee shop job?

No, I’ve always worked in the cafeteria.

I started to approach the worlddell’hospitality since I was a child, this is why I chose the Carlo Porta Hotel Institute in Milan.

Initially I wanted to work behind the scenes, in the kitchen. Having started school and above all the world of Sala e Bar, I discovered the cafeteria, which immediately captivated me.

Contact with the public, the world of coffee and mixology had become my new goals.

After the hotel management school I did severalstage and catering, covering all possible roles, up to my first serious contract at the bar of a very important brand.

Here I learned to put insecurity aside, bringing out my character.

In fact, it wasn’t a beautiful environment and hazing was rampant, but at the same time it gave me the opportunity to grow and understand how to communicate better with everyone, thinking about the good of the club and the team.

Then I moved to Linate airport, where instead I learned to work at a very high pace, managing a large amount of stress and the nervousness of some customers.

Here I also had the opportunity to be the trainer of a group of guys who were going to work in a new store in the chain.

So I consider this too a great achievement and professional experience.

Finally, I worked for another 5 years in via Foppa in Milan, where I understood how to handle and not handle certain situations.

Here I entered for the first time in close contact with the evening and cocktail world, which I hope to further explore in the coming years.

Ok, you have done many jobs, as well as experiences. I think that by now the world of hospitality has no more secrets for you. You are something of a multifaceted figure!
So congratulations for all your experiential baggage!

Taking a step back instead, tell us how you got here from Caffè Ernani.

Actually a bit by accident. Let me explain: I was looking for a new job that would give me the opportunity to grow personally and professionally, as well as move from a part-time to a full-time contract. Plus I already knew I wanted to work in the day cafe.

Thanks to word of mouth, I learned that you were hiring a new bartender.

You were exactly what I was looking for and I considered myself up to your needs. So here I am!

After all, I’m still young and I could have risked changing jobs and you have given me the opportunity to enrich and deepen my knowledge of the product we deal with.

I’m happy to hear all this, sometimes the case brings us people like yours who are extremely prepared and passionate about this job.
You should never let them get away!
Whatever you want to learn and deepen, you know very well that we are here for this and it can only make us happy to receive questions from those who want to make this job great!
Having arrived here, I ask you if you have a goal for the future?

My goal is not yet well defined, but in general I am aware that I still want to grow a lot in the role of bartender.

Then over the years I would like to build a working position that would also allow me to detach myself from strictly “bench” work at times and start with a more managerial role.

I also have other passions and perhaps these will offer me a job in the future.

We will see!

You anticipated me, I was just about to ask you which ones hobbies or passions you have outside the coffee shop.

Let’s say that in general I am a handyman, or rather, a very manual person.

In fact, one of my greatest passions is to restore vintage bikes.

I work on looms ranging from the 1920s to the 1960s. The important thing is that it is vintage and with interesting lines, so that I can have fun and also have more income from the resale.

I started as a kid with the scrap I found around. Putting my hands on it, day after day, I have always improved, from the wiring to the mechanics, passing through the aesthetics.

The only difficulty lies in the spare parts, which are often unobtainable or available in areas very far from mine. For this reason, it sometimes takes up to three years to finish a bicycle.

Then, in the free time that I have left after the shift, I go climbing in Pero or outdoors, even if more sporadically.

I had started with a friend of mine a bit as a joke and as I improved, I became more and more passionate about it. Over the years a beautiful group has also formed, thus becoming both a physical challenge and a moment of socialization and meeting.

Finally, I’ll tell you the last thing then let’s move on, I also did rugby. I would recommend this to anyone because nothing shapes you like this sport!

You form character, you learn to assimilate and react to defeats and blows. It’s not only brutally physical, but it’s very mental. This is precisely what determines victories and defeats.

I don’t think anyone has so many passions and spends so much time on their hobbies, so really well done. It’s wonderful to be able to devote yourself even to what doesn’t concern work, with constancy and determination, always showing tenacity and strength.
I hope you will continue like this always!

As already mentioned, what I like most is the relationship with colleagues: we laugh, we joke, there is good communication, we are always on the same wavelength, there is support, approval, stimulus… in short, a truly excellent relationship, not obvious and not easy to find in other workplaces.

However, what I would like to change, even if it is very complicated, is the square footage of the place or being able to move to another larger place. This would therefore give us the opportunity to communicate more with the customer, deepening certain discussions or curiosities, as well as offering more products or different extraction methods.

Finally, within Ernani, I would like to obtain more managerial responsibilities and, if possible, start a training project with you, Martina, to become the trainer of the restaurant myself.

I immediately take your request as accepted! I can’t describe the pleasure I feel when people even tell me “I want to know more”, this shows your non-superficiality and the desire to ask questions to improve.

What are your first impressions?

“Demanding”.

With this word I summed up everything!

To explain myself better, however, I say that I did not expect this job to be like this. I’ve already worked as a bartender in other cities and clubs, but never at such a frenetic pace and above all with respect for quality in every part, as here at the Torrefazione.

But actually I like all this!

Having to commit so much, having to grow and learn is inspiring. I found myself in front of a whole new challenge and I can’t wait to see what else awaits me!

Then the relationship with the customer is very beautiful and fascinating, in its best and worst forms, that is when they try to drive you crazy.

It’s funny to see how my behavior behind the counter changes theirs too, in fact understanding that a smile and (good) indifference are the best weapons I have.

Finally, I always try to focus on the positive comments, which stimulate you and make you grow, and don’t listen too much to the negative ones, dictated by the client’s nervousness and stress.

And finally the team is no different: we work very well together and I’m happy to be part of it.

I really like your spirit! I think that’s the best way to approach this job. A smile is truly a weapon, it can change the course of the day for you and also turn it around for customers, not only for their well-being, but for yours, who will have to face fewer and fewer complaints and work with polite and kind people. So congratulations!
You said you’ve done this job before, so how come you didn’t expect it like this?

In reality, I first graduated from the Institute of Electrical Engineering and Mechanics, then starting my professional career as a mechanic and tire fitter for about 4 years.

I didn’t mind the job but the main problem was the contract or rather the absence of the contract… Not having stability and security about the future prompted me to change course.

At the time I was still living in Sicily in the province of Messina.

So I started working in the restaurant business, albeit in a very different way. This is why I say that I didn’t expect the job as a bartender like this.

In Sicily the work is seasonal from May to September, so the contracts are also different.

Then, unless you work in a purely touristic city in the month of August, the work has a much less frenetic rhythm, more calm and relaxed, without any rush, neither on the part of the client nor on the part of us workers.

Finally, in Sicily I wasn’t a real bartender, as the roles were less defined: one worked a bit at the counter, a bit at the till, a bit in the dining room and a bit in the kitchen… in short, wherever there was a need you were.

Here in Milan it’s a whole different story!
But it’s cool!
I love receiving all these challenging stimuli and I can’t wait to grow even more!
And once again congratulations for your spirit and the way you take life and work. Considering these fast rhythms as stimuli and challenges allows you to face the day with positive energy. This will benefit you a lot in the long run and above all it will take you high and far!
But taking a step back, tell us how you got here?

I decided to move to Milan because, unfortunately, as much as I like it, in Sicily there is no future in the workplace, also and above all at the contractual level. Stability and security are few and most places the contract just won’t let you.

With the help of a friend of my brother’s who hosted me for a few months, I managed to come here in Milan and now I’ve found a home and live alone.

In the meantime, I spent the first month studying the city and dropping my curriculum everywhere. One day I came to have breakfast at the torrefazione, I saw the sign for personnel research and it intrigued me, but I was also sure that you were only looking for trained and experienced people, given the reputation of the place.

After a week, however, I took courage and left my CV here too. The next day to my great surprise Fabio contacted me immediately and here I am!

In fact, I like that you train the staff, giving everyone the opportunity to grow and become a true professional!

I feel lucky to work here.

And I am thrilled by your words. I always tend to see the flaws in my job and in administration work in general, being a perfectionist myself. However, hearing that our employees consider themselves lucky to work in Ernani makes my eyes watery, and I’m not exaggerating!
Having arrived here, I therefore ask you if you have a goal or plans for the future?

Right, each of us has a goal for our life.

Mine is to continue to grow with you, deepen the world of coffee more and more and become a true professional.

And I sincerely admire and take a lot of inspiration from Luca, our boss!

He changed his life, going from an electrician to the coffee sector and in a small part I see myself again. It must not have been easy for him, but he did it very well.

I want this to be a lesson for my future.

From your words we can hear your goodness of mind and your big heart. You let your voice show admiration and never envy, understanding and never judgement. You are a very driven and inspired guy and for that I admire you!
In addition to work, however, I imagine that you also have other commitments, hobbies and/or passions. Which?

Thank you Martina for what you told me, I appreciate it.

Returning to us, however, one of my greatest passions is horse riding. I love going into the woods on horseback, in contact with nature and with this beautiful animal.

This love was passed on to me by my grandfather who always took me around the woods as a child. I felt free, at peace and in complete harmony with my surroundings.

Sometimes I would like to go for a walk again, but in Milan it is a bit complicated. I’m sure, however, as soon as I settle down a little more, I’ll look for stables towards the periphery.

Then consider that for us Arabs the horse is a very important symbol, always belonging to our tribes, with a history of symbiosis and help with the centenary man, so much so that it is considered a sacred animal. For me it is therefore really important.

Then as another hobby while I was in Sicily I went to play Paddle at least once a week, this point to resume soon!

Again you feel your passion. I like talking to people who convey these feelings, so thank you very much for the chat!

As you have been schematic in the questions, so I will answer you too:

  • I certainly like Ernani’s staff and the internal system, i.e. the fact that you never stop learning. In fact, as I have already said, the motivation is continuous.
  • Instead, I would change only a small organization of the Staff, in the sense that I would define the roles of all of us more clearly so that the hierarchy and therefore the responsibilities are better clarified in an unequivocal way.
  • I chose Ernani because, as already mentioned, I feel honored: it made me discover coffee, a drink that I didn’t consider so interesting, as well as such an act of cultural significance. Then having the opportunity to work in such an important place in the history of Milan would certainly have left me something!

However, I will not repeat yet what my goal is as we have already talked about it.

However, I will conclude by saying one thing: “I BELIEVE IN CHANGE!”.

I think there is everything in this sentence: trust in the positive change of people and of life. This also involves having to commit to change and improve, as well as not being afraid of the future, but taking everything to the fullest and seeing where life takes you.

This is my philosophy!

Ciao Davide! Prima di tutto grazie per avermi dedicato tempo per l’intervista, tra un turno e l’altro.

Sei entrato nel team ad ottobre 2022. In questi mesi hai avuto modo di ambientarti, conoscere e farti conoscere da colleghi e clienti. 
Ora ti chiedo a freddo: quali sono le tue prime impressioni? 


Ciao Marti, figurati grazie a te! Con l’intervista ora mi sento a tutti gli effetti parte del gruppo e questo mi piace! 

In generale infatti mi sono trovato bene con tutti fin da subito, ovviamente ho instaurato rapporti più intimi con le figure che sento più affini a me, ma nessuno mi ha mai fatto sentire escluso o a disagio. Per me questa è una caratteristica fondamentale per un ambiente lavorativo.

 

Oltre ad accogliermi poi mi hanno anche inserito e formato nella maniera corretta, continuando a spronarmi per crescere e migliorare. 


Stesso parere anche nei confronti dei clienti. Per il momento la reputo un’esperienza molto importante e soprattutto formativa, che mi porterò dietro per tutta la mia carriera. Per la prima volta mi sono dovuto mettere in gioco e avere a che fare con persone anche molto diverse da me sia per interessi, modi di fare, che per età. 


Stesso discorso vale anche nei confronti dei clienti. Per me questa è la prima volta e ora spero che non sia l’ultima! 

 

Questo, come hai detto, è il tuo primo lavoro… possiamo ora affermare che ti piace e che ti ha arricchito. Te l’aspettavi così? 


In realtà non avevo nessuna aspettativa, in quanto non sapevo fino in fondo cosa significasse lavorare, avere responsabilità, orari da rispettare, gestualità e nozioni da apprendere, gestire il rapporto con i colleghi, e così via. 

E soprattutto non ho neanche metri di paragone. 


Ma dopo questi primi cinque mesi posso affermare con sicurezza che questo lavoro mi piace, in particolar modo mi ha affascinato la scoperta del mondo del caffè!


Come tutti noi infatti bevevo caffè quotidianamente, ma mai mi sarei aspettato che potesse avere questa profondità. Lo reputo interessante, tanto da farmi venire la voglia di scoprire tutto il settore del Food&Beverage nel suo complesso.

 


Sì, come scritto in tantissimi articoli, lo capisco bene. Quando beviamo il semplice caffè in giro non ci accorgiamo di quanto sia in realtà complessa quella “semplice” tazzina. Quando però la scopri non riesci più a farne a meno! 

Ma facendo un passo indietro, raccontaci come sei arrivato qui? Ovvero, quale scuola hai frequentato, quali erano i tuoi obiettivi? 


Ho frequentato prima il Liceo Scientifico qui a Milano e successivamente mi sono iscritto alla facoltà di Economia alla Cattolica. 


In entrambi i casi non ho bellissimi ricordi. Infatti purtroppo gli ultimi due anni di superiori li ho frequentati nel periodo Covid, il quale ha stravolto completamente la scuola, dandoci poche occasioni di contatto, di crescita, di confronto e soprattutto di apprendimento. 


Alla Cattolica invece non mi sono trovato bene nell’ambiente e ho deciso così di fermarmi un attimo con gli studi, iniziare a lavorare e provare a capire meglio cosa volessi fare. 


Ad oggi sono contento di aver fatto questa scelta, perchè ho le idee più chiare e soprattutto ho un’idea più precisa dei miei gusti in ambito lavorativo. 

Per questo a breve mi iscriverò ad un corso accademico specialistico che mi porterà a raggiungere i miei obiettivi futuri. 


Nel frattempo tengo sempre stretto il mio sogno di aprire una StartUp giovane ed innovativa, probabilmente in questo settore appena scoperto!

Mi sembri ora molto più sicuro di te e consapevole di quello che vuoi. Questa cosa mi fa davvero molto piacere! Mi sembra di rivivere i miei passi durante l’università, mentre esattamente come te a 19 anni ero entrata nel mio primo lavoro qui alla Torrefazione Ernani. 

Ora, parlando d’altro, quali sono i tuoi hobby e/o passioni?


Come passione al primo posto metto senza dubbio lo sport. 

Principalmente seguo il calcio, anche se lo sport che più ho praticato nella mia vita è stato il basket e tutt’oggi lo reputo quello più completo dal punto di vista fisico e mentale. 


Ho smesso di giocarci nel 2020 per scelte personali a seguito di un infortunio. Da qui ho iniziato ad allenarmi prima in palestra e poi a casa per rimanere in forma. 


Poi ovviamente da buon diciannovenne la maggior parte del mio tempo libero lo dedico alla mia ragazza e ai miei amici, cercando di stare più tempo possibile in giro per provare esperienze nuove. Mi piace questa indipendenza che sono riuscito a crearmi! 

 

E di nuovo ti capisco! Il primo lavoro, i primi stipendi, la prima vera sensazione di indipendenza non si scorda mai, ed è forse uno dei momenti più emozionanti di tutti. 

Tornando a noi, abbiamo quasi finito, mancano solo le ultime domande di rito: 
  • Cosa ti piace di più di Ernani? 
  • Cosa invece cambieresti? 
  • Come mai hai scelto proprio Ernani? 
  • Quale obiettivo hai? 

Ti risponderò in modo diretto perché ho già bene in mente tutto: 

  • Ciò che più mi piace di Ernani è senza dubbio il caffè. Sembra banale come risposta, ma non lo è. Come dicevo, grazie a questo incredibile prodotto che offriamo ho avuto modo di scoprire di più sul chicco tostato e ho capito che è tutto tranne che semplice e scontato. Ciò unito poi al fatto che secondo me abbiamo un rapporto qualità prezzo a dir poco impareggiabile, è stupefacente. Non esiste un prodotto simile a Milano e penso anche al di fuori di Milano. Credo veramente nel nostro caffè e nel nostro progetto.
  • Al contrario cambierei l’esterno del nostro locale. Secondo me non rende giustizia al servizio ed al prodotto che offriamo, oltre a non far percepire per niente il mondo che si apre all’interno.
  • La scelta verso Ernani è stata prima di comodo, nel senso che era interessante la vicinanza a casa, gli orari e il contratto. Poi dopo aver avuto il primo e secondo colloquio con Fabio, il Bar Manager, volevo lavorare in questo ambiente, che mi è sembrato fin da subito supportivo e coeso. Credo sia infatti fondamentale, soprattutto nella prima esperienza, poter lavorare in modo tranquillo e collaborativo. Infine ho scelto proprio Ernani perché la reputo una sfida, perché è una caffetteria diversa dai classici bar che si trovano ovunque, con ritmi più frenetici e serrati, oltre che la richiesta di una maggiore professionalità.
  • Infine il mio obiettivo, come già detto, è la ripresa degli studi per trovare il mio ruolo all’interno del settore Food&Beverage!

Let’s break the ice: tell me about your previous professional and educational experiences at Caffè Ernani!

Hi Martina, let’s get started, I’m ready!

I entered the workforce very young, at 17 as a lathe operator in a company in Desio, where I returned to work thanks to Caffè Ernani.

At the same time I had a second job behind the counter of an ice cream bar in Seregno.

The bar counter started calling me very early and I couldn’t resist!

I thus discovered my passion from a young age.

After a few years I moved to another bar, this time in Seveso and for the first time in the evening and got to know the world of mixing.

My path was now crystal clear: Barman, but it was not enough for me to learn in the field, I felt the need to study, learn and professionalize. Reason why I took a professional course at Aibes.

I fully agree with you! By now, avid readers know: for me, education is the basis of everything!
Please note: not that practice and experience are not important; on the contrary, they are crucial. It’s just that a theoretical basis supports practical learning every step of the way: you understand why things happen and then you have to apply it. I’m glad you also felt this same need!
Sorry to interrupt, go ahead.

No, please, it’s nice to be able to compare and find people on the same wave as you.

Coming back to us, upon completion of the course I went to work as a bartender in a hotel in Corso Buenos Aires in Milan.

Then I went back again to work in a Brianza company, this time because unfortunately, as much as I love the restaurant business, sometimes it is a bit hostile and it is difficult to find a good working environment.

In the meantime I took two other courses: the REC, for food and beverage administration, and the Wine Sommelier course. At the end of the latter, my life took a huge turn: the trainer of the course itself introduced me to a club, which would shortly become my club: Cork.

It was 2004 when I started this new and incredible adventure, which lasted a full 18 years. Cork has been my family, my friends and my life for a very long time. Started out as a wine-focused venue, but has transformed over the years, following my interests. Toward the end in fact the mixing side took an important position.

This marked the turning point in my personal and professional career.

Opening from the morning, however, I found that I needed to delve into another additional topic: coffee. I had never given it much thought, but there is as interesting a world behind coffee as there is for wine and blending.

Therefore, I took a professional course again, at AICAF, focusing on cafeteria and coffee knowledge.

Well, I don’t even know what to tell you! You are full of experience and knowledge, you have taken many courses that have made you a well-rounded professional, as well as aware of different realities and types of jobs. You have never backed down from anything…I can only offer you my congratulations!
But now a question arises: how did you get to Cafe Ernani?

So after 18 years I sold the place, mainly because as much as I loved it with all my heart, I needed to find a more “humane” lifestyle and working hours, so it was time for a change.

In the meantime, however, I joined as a partner in a restaurant in Ibiza. At first it started almost as a game, but now I am looking forward to future developments, managing everything remotely, with the help of my partners on the ground.

And so here I am now at Cafe Ernani!

Why did you decide to change the field?

As I anticipated, I needed a lifestyle change, but at the same time I didn’t want to stray too far from my field. That’s why I decided to join Ernani as a sales agent, selling coffee and ice cream products for another brand.

Choosing Ernani specifically as a company was easy because I have known them for almost 20 years, having been my supplier at Cork. There has always been great respect on both sides, and I have been able to see and test their professionalism, growth, advice and reliability for a long time.

And for that I thank you, it’s always good to hear!
How would you describe your new work?

I must admit that I did not expect it to be like this-I thought it would be easier to get into new places, but it is not always.

I realized that to change the café in a daytime establishment, means to almost change its soul, the basis of its work, the reason why customers come in. But at the same time, when you can communicate the Brand and its values, as well as a great product that convinces immediately upon tasting, it is a great satisfaction!

So what do you expect from this experience?

To improve and make my professional figure even more complete, with everything that I am most passionate about and that can become supportive and advisory to the client!

And I am sure you will succeed, because you have already demonstrated so much!
Going a little more personal instead, do you have any other hobbies and passions?

Unfortunately, with the old way of life, the possibility of cultivating hobbies was difficult, however, I have always enjoyed motorcycles, because I love the adrenaline rush when I get into the saddle!

Then at least once a week I go to play Padel.

Another sportsman in the company, leaving me alone in the lazy group!
Joking aside, we’re almost done, just missing the “ritual questions.”

  • What I like most is the relationship with the management, when you join Ernani I have seen that you do not join “a company,” but you become like a member of a family;
  • I would change the presentation of some specialty coffees instead, but that is actually already happening now!
  • I chose Ernani, as mentioned above, specifically because of the relationship with the corporate staff;
  • The goal is to grow and become a well-rounded professional;
  • And my favorite coffee is the Allegro, probably because I have it in my heart, having served it at my old place for 18 years!

Hi Renzo! First of all, thank you for taking the time to interview me, I imagine it is never easy for you, being one of the busiest people in Coffee Ernani Distribution!

Let’s talk first about your previous professional and educational experiences at Cafe Ernani!

Hi Martina, yes exactly as you know, finding free time is difficult, but I am glad to be able to do the interview!

Then let’s get started right away!

Let’s say that my professional career really started very early: my first job was a painter with my father when I was 14 years old.

I then immediately entered the world of “adults,” learning the meaning of responsibility, learning a practical trade. I understood what it means to “get busy,” and it all shaped me as a person.

After that I was a turner for a couple of years and went back to painting again, until I was 19.

June 31, 1991 was the date that marked my career: I became a commercial agent and maintenance mechanic.

This work has given me stability, satisfaction and opportunity.

In addition, I was able to combine customer relations, with practical work, thus offering a complete figure: able to present the company and provide essential technical service.

Then when our old boss sold the company in 2003, Luca, Claudia and I decided to take it over, thus becoming entrepreneurs of a small business in Brianza. At that time we were only involved in the distribution of roasted coffee in the ho.re.ca. channel, now we have expanded and produce our own coffee, following our own tastes and ideals.

Why did you decide to change the field?

I actually never saw it as a change in scope, I always did very practical work, where my hands built and made the final product, simply the coffee sector won. It sounds almost ridiculous and boring, but it is perhaps one of the most beautiful worlds one can know.

Then when we decided to open up production and the greatest Italian professionals came to train us, it was exciting to hear them speak and participate actively in the creation of our coffees.

How would you describe your relationship with clients?

I would say: simple, clear and direct.

Since I then started delivering, I have been able to make more meaningful connections, see them more frequently and thus know more about their problems and support them even more.

They all know very well that they can tell me whatever they need, there is trust and transparency, always!

So what do you enjoy most about this work?

My personal satisfaction in always being able to find a solution to everything and knowing coffee machines in depth by now.

Andando un po’ più sul personale invece hai altri hobby e passioni?

As a boy I was always a sportsman, from cycling to soccer to karate.

Now I have passed on the passion for soccer to my son, and I enjoy being able to follow him and see him at all his games.

Definitely what I like most about Ernani is the product and the philosophy behind it: continuous research and experimentation to always achieve something more.

And for the time being I will tell you, I would not change anything. We have already made huge changes to the organizational structure and business processes. Then of course you can always do better and we will. But for a moment I tell you that I am happy like this!

My goal is to continually grow, even after a 36-year career! Reason I had chosen this company at the time: it gave me a chance to grow professionally.

Then I would like to be joined by a young guy to whom I could pass on all that I have learned over the years.

Finally, my favorite coffee is without a doubt the Vivace!

If I may I would also like to give one piece of advice to everyone: form!

I, too, began by learning from the experience of my older colleagues, but training must accompany this stage. For some it seems like a waste of time…I often hear, “What do I have to study to make a simple coffee that I’ve already been making for 30 years?”

Trust that you cannot even imagine the vastness of this area, and being able to discover it is the most fun part!
