It’s Still Night – Mirna Cara

He soon realizes that something does not add up; he does not remember names and faces and stories of any of the people present. Everyone chats in a friendly manner, recalling anecdotes that tell her nothing.

But then the waiter serves the appetizers, ignoring her. To her he instead delivers shards of earthenware, what looks like the remains of a vase. What should he do with it? Is this a joke? But no one laughs; on the contrary. Everyone watches her seriously, as if waiting for her to figure out what to do.

I cross long streets in the sunlight, under the astonished eyes of passers-by who see me sneaking out bare-assed as I try to at least cover my boobs.”

Veronica has had many women in her life and has also incredibly managed to be hated by all of them except Emma, with whom she has been in a stable relationship for fifteen years: she shares a house, two dogs, and a job with her. The last of three daughters, full of insecurities and psychological turmoil that force her to always feel she has to prove something in order to be seen, when Veronica has a goal she pushes, pushes, pushes like a caterpillar, until she reaches it but leaves only rubble and injuries in her path. In this particular case, the target is her therapist, Fiamma Martini.

Instead, today we present the single-origin Specialty coffee belonging to the circuit: the Brazilian Women’s Coffee signed by Ernani Coffee.

Because the association not only promotes and publicizes the importance of supply chain sustainability, but also makes a concrete commitment to support the meticulous work done in the coffee’s countries of origin.

In addition, this Friday, March 8, as you know, will be International Women’s Day, so we wanted to take advantage of this date to let the widest possible audience know about the Association and its projects and concrete help, along with our Café.

For this reason, Caffè delle Donne will be available online at the Ernani Coffee Shop and in Torrefazione Ernani in Milan, Corso Buenos Aires, 20. Here you can either buy it for home or as a gift, or taste it in espresso.

Along with each package sold, we will combine a descriptive flyer about the Alliance and coffee, so you know exactly what it is and why it has such great value in the industry!

Description of “Women’s Cafe”

A socio-sustainable coffee with a sensual and feminine flavor profile, grown, harvested and processed by women.

Women’s Coffee is a single-origin from the Cachoeira farm in Brazil, grown, harvested, and processed from a pink plantation adhered to the IWCA.

More specifically, it is a Brazilian Santos, from the Minas Gerais area, famous for the high quality of coffees produced.

The larger cursor on the map below indicates exactly which region our coffee comes from. While the other sliders show the other coffee-growing areas of Brazil.

Everywhere, more and more women are becoming an essential part of the bean processing, occupying positions of power and revolutionizing the coffee world. To date, an estimated 70 percent of the workforce in the countries of origin is employed by women, and 25 percent of plantations are managed by women entrepreneurs.

Giving them importance and value by providing better social, economic and working conditions is no longer just important, it is crucial.

But back to us…

The Brazilian Santos Women’s Coffee selected by Ernani grows at an altitude of about 1000m asl, thus giving off pleasant and sweet aromas, which we will see in detail below.

The fruits, containing our kernels, are harvested with extreme care through picking, that is, hand picking drupe by drupe, selecting only those that are ripe at the right point, and processed afterwards using the washed method. Then the growers remove the husk and pulp in order to place the beans inside clean water pots to ferment. Finally, the grains are left to dry in the sun.

This will bring increased freshness and aromaticity during extraction.

It presents sweet notes of almond and red fruits, which are then balanced by a fresh and pleasant tartaric acidity, reminiscent of pink grapefruit.

Balancing this are softer notes of cocoa and nuts.

Suitable for

Those who seek a high-quality, fresh, fruity and citrusy single-origin Arabica, as well as socio-sustainable and Specialty coffee certified.

Extraction tips

Espresso

Espresso extract we recommend a dose of 8.5/9g per person, to obtain an intense and creamy cup, and a water temperature of 93°C.

With this method the more acidic notes are enhanced, in addition to the development of a vast, intense and amazing aromatic profile.

Mocha pot

The coffee in this case is more sweet than acidic, with even a very slight hint of bitterness, absent in the espresso.

N.B. remember never to press the coffee inside the mocha filter and never to make the “mound” either! These steps do not make the coffee more intense, only more bitter and with a burnt aftertaste.

The coffee in the filter just needs to be leveled!

Paper filter

If extracted in a filter, the sweet notes are enhanced even more, while the acidity is more balanced. The aromatic notes of fruit in this case dominate the cup.

We recommend a Brew Ratio of 64g of mince to 1L of water and a temperature of 92°C.

The entire day is designed to take you on an extraordinary journey through three different literary themes, stimulating all five senses!

But how exactly?

In the refined setting of the Cabinet Art Gallery in Milan, Another Coffee Stories, the Milan-based publishing house offering the innovative concept of synaesthetic reading, promises to combine art and literature, and of course our Ernani coffee, in an unprecedented experience.

The event represents a unique combination of the fascination of words and the beauty of the synaesthetic approach, which will transform the world of literature into a tangible reality.

For example, the robustness of a coffee might remind one of a gory, unforgiving plot.

Inside the Gallery there will be three tracks with historic carriages, which will take you to unique literary worlds through different settings and atmospheres dedicated to three authors who have made the history of world literature-Doris, Gulliver, and Holden.

Each author will then be the keeper of a special track-a setting that reflects his or her work.

Choose the track and style that best represents you and enjoy the opportunity to immerse yourself in these worlds, where art, good food, coffee, and literature come together in one immersive experience.

You can taste as many coffees as you like, prepared through brewing methods, i.e., coffee extraction methods alternative to espresso, such as V60 and Aeropress.

This year we wanted to do things big, to give you the opportunity to get to know the world of coffee from A to Z, in all its facets, even those you would never have thought of!

We want to give the opportunity to anyone, come oncoffee lovers, to the curious, up to professionals in the sector, to touch the raw coffee, its roasting and obviously taste it.

For us, coffee is not just our job, but it is a great passion. Being able to pass it on to you too is our main goal!

The event will be awalk-in,that is, the doors will always be open to anyone throughout the day. You will therefore be able to arrive immediately at 10.30, or only for the events that interest you most and leave whenever you want.

There will be no pre-established routes to follow, but you will only stop at the stations that attract you the most!

During the day of Sunday 1st October we organized many events together with collaborators and friends from different sectors, all closely linked to the magical toasted bean.

From now on you can come and taste Espresso or filter coffee.

Paolo, Andrea and Martina are waiting for you to follow you in a fun tasting, to discover the incredible flavors that coffee beans can have.

Furthermore, the first Author will present his book to us!

In fact, Giada, CEO of the innovative Milanese publishing house, will be with us throughout the day Another Coffee Stories, who will accompany us in the discovery of his books through a synesthetic journey.

Ok, but in a nutshell what will we do?

Every half hour or so, starting from 10.30, each Author will present his book. In the meantime, we at Caffè Ernani will prepare a coffee expertly combined with the texture to taste it together.

Obviously there will also be space to ask questions to all the writers, as well as buy the books themselves.

You will be able to witness the roasting of different coffee samples and follow all its phases, to see the physical and chemical changes of the beans, from the change in color, size and shape, up to the development of the aromatic profile.

Coffee Beer Tasting!

This will be the most exclusive event of the entire day, so get ready to sign up!

From 5.00 pm the doors will close, but not for everyone!

Because for the 18 of you who purchase the ticket it will be possible to do the Coffee Beer Tasting.

Fabio, in art BeerSlinger89 beer expert, and Martina, coffee expert, will accompany you in the sensorial experience to discover the often unusual union of these two fascinating worlds.

They will tell you about the different brewing methods, and the different ways in which the coffees were used, as well as curiosities and anecdotes that will allow you to know the products offered in even more detail.

Obviously what we all want most is to taste them!

Fabio has selected 4 of them, all from artisanal Italian breweries, which carry out continuous experimentation and analysis to improve their product day after day.

The breweries themselves have then selected only fine specialty coffees for their blending, to leave nothing to chance and work only with great professionals!

Today I show you a different, unique and really good reality!

I’m talking about In.vece a new and young brand that offers a plant-based alternative to everything, or almost everything!

We started collaborating in 2021, and we are really pleased with them, both because of the goodness of the products and the continuous research they do, as well as the breadth of their solutions.

And all this is a project carried out by two brothers, Matteo and Dario Beluffi, who have made their passion their work and with excellent results to boot!

You can find their products in Torrefazione Ernani in Milan, Corso Buenos Aires, 20.

But let’s find out more!

Presentation

In.vece is a new brand, but not only that-it is a new idea!

An idea that nothing should limit the joys of the palate!

In.vece wants to give everyone, those who are intolerant, allergic or have simply made a different food choice, an excellent alternative.

To do so, he researches, tests, develops and harvests new products, rich in innovation, delicious to taste and perfect to use in the preparation of both sweet and savory recipes.

The product line is constantly being updated: great new products arrive every month to spread, drink or eat!

Products

As mentioned above, In.vece offers a plant alternative in each category:

  • In.lieu of egg, which includes protein algae (whole egg/vegetable yolk) and aquafaba (chickpea-steeping water-vegetable albumen)
  • In.lieu of milk, range of beverages designed by a professional for professionals based on oats, soy, coconut and almond;
  • In.lieu of cream, vegetable whipped topping without soy, gluten and hydrogenated fats and with only 10 percent total fat;
  • In.lieu of chocolate, alternative to white but almond (20 percent), soy-free, fiber-rich and 30 percent less sugar than conventional.
Everything is of course 100% plant-based, as well as gluten-free and without added sugars! *(where possible)

For example, Oat milk:

  • It is allergen-free;
  • It has only four ingredients;
  • It’s great both cold and hot: try whipping it up to make a great creamy, velvety cappuccino!
  • It can be used at home, at the bar, or in restaurants for sweet and savory recipes;
  • And it is soy-free and without added sugars.

But not only that!

With all their milk alternatives, we also prepare other beverages:

  • Chai Latte: a spice blend of cinnamon, fresh cardamom, star anise, whole cane sugar and Indian black tea, as tradition dictates. It is an energizing drink thanks to cinnamon and cardamom;
  • Gold Milk: spice blend of turmeric, pepper mix, rosebuds, tonka bean and white cane sugar. It is perfect for activating metabolism due to curcumin and piperine. In addition, turmeric is also a powerful adaptogen, thus helping the body counteract inflammatory phases.

Speaking of In.lieu of egg, these are products to replace whole egg or egg white in the kitchen or bar, ideal for both sweet and savory recipes.

Seaweed, for example, is powdered and naturally contains 63 g of protein per 100 g of product, as well as being a source of vitamins and minerals-ideal for supplementing the intake of essential amino acids in a diet.

Aquafaba, also in powder form, replaces egg whites to create meringues and macarons. Having excellent emulsifying abilities, it is also perfect for creating foams and sauces.

And again.

The 100% plant-based and gluten-free macaroons, as well as the tartlets, make for excellent shortbread and mignon tarts.

Now comes my favorite products, however: spreads!

These, too, like everything else plant-based, vegan, gluten-free, with no added sugars and only good, fresh ingredients.

In Torrefazione you will find Salted Caramel Creamy Spread made with Coconut.

Trust me, who by now will be at the end of the tenth jar, it’s too good!

The range of spreads is also expanding! I can’t anticipate anything yet, but I’ve already tasted a couple of new ones and they are absurdly good, you’d never go back to any other cream!

Complementary products

In addition to the products already presented, thanks to In.vece we learned about another small company engaged on the vegetable front: special foods.

In fact, in Torrefazione you can find Special foods artisanal, 100% vegetable and gluten-free cookies.

There are many flavors: lemon, vanilla, coconut, pistachio, hazelnut, and cocoa and cinnamon.

And they come in 40-gram packages, so perfect for breakfast!

Meet Caffè Ernani new project in collaboration with Gone West: For the Planet.

Already the name “For the Planet” hints at the intent of the project. In fact, the collaboration came about to breathe new life into our coffee.

We at Caffè Ernani are trying to increase our commitment to the environment step by step. There is still a long way to go, but the work to get there is instead continuous.

I came across this company, Gone West, one morning somewhat by chance, and was immediately fascinated.

I had to contact them-so I did!

And now we are finally ready to launch a new product: the For the Planet blend.

But let’s go step by step.

What is Gone West?
Gone West is a company inspired and driven by concrete environmental and socio-economic goals.
Since 2013, it has planted more than 5 million trees and created more than 150 “green” jobs.

It offers people and companies innovative and creative opportunities to work toward building a better future, combining the urgency of conserving and regenerating the planet’s natural resources with the need to ensure economic and social stability throughout the process.

In order to be legitimate and ensure that all trees are actually planted and protected they have “Plant&Protect” agreements, whereby they guarantee long life of the planted trees.

And to top it off they really put everything to the test! The project is in fact:

  • Designed with respect for the natural environment;
  • And importance is given to the planet and to people.

Starting from nothing, they planted more than 5 million trees. Moreover, over time, they have gained relevant and extensive experience in forest creation, restocking, landscaping and maintenance work.

The goal? Create environmental and social benefits worldwide, generate ethical and ecological jobs, and help create or restore natural habitats.

Let’s discover together the For the Planet blend

A coffee designed to end a hearty lunch, reactivating and helping with digestion.

A coffee that can also be sipped leisurely and reminiscent of a nice cup of steaming tea, sweet and delicate, or, why not, even a mouth-watering hot chocolate flavored with cinnamon, depending on the extraction method used.

Special thanks to Paul, our roaster, who has arrived at a well-balanced coffee, the result of a skillful blend of Central American Arabica coffees and robusta, African coffee varieties.

In detail, it is a blend with a greater prevalence of Arabica coffee.

The selected Arabica qualities, specifically Brazilian Santos Cerrado Bom Chocolate and Guatemalan SHB Huehuetenango, are very distinctive in that they have a pleasant, fresh acidity, along with intense aromas of bitter cocoa the former and ripe fruit, such as plum or strawberry, the latter.

The sweetness is then balanced by the bitterness added by the robusta coffees and intense and really tasty dark chocolate notes.

Paul thus succeeded in creating a balanced blend, as in a melodic symphony.

Finally, the espresso crema is firm and deep hazelnut in color, while the body is round and enveloping.

It is a coffee suitable for those seeking a blend balanced between sweetness and bitterness, with enveloping notes of ripe fruit and chocolate.

All this combined, as already explained, with great environmental sustainability!

A new sponsorship of Caffè Ernani has been born!

We decided to support a local sporting entity that we are very fond of.

In fact, the owners of Caffè Ernani have always been big basketball fans, and having all grown up in Desio, they have one particular team in their hearts : Aurora Desio Basketball . They follow every game, even on the road, so they always have a way to cheer their favorite team.

We could only begin this collaboration to offer concrete support.

We believe that supporting sports is important: wellness and physical health are fundamental to being well.

Aurora Desio Basketball – Presentation

The club was born on June 29, 1994, a few days after the demise of the old and glorious A.S. Aurora Basket Desio.

After the first 1994/95 season, exclusively dedicated to youth activities and studded with several satisfactions, the merger with Orobica Basket Bergamo allowed the Desi-based club to return to the B2 series championship in the 1995/96 season.

The following year, thanks to the acquisition of Juve Cremona’s rights, Aurora participated in the B1 championship, immediately touching promotion to the A2 series at the first attempt.

In the summer of ’98, however, they opted for a about-face, choosing not to register for the B1, but to restart from the Promotion league, in which they could have their own youngsters play.

The climb to the national championships proves to be sudden, and in just 3 seasons Aurora conquers the C1 series.

Indeed, it began with the finals in the spring of 1999 during which the Desian team hit the D series; the following year the script repeated itself: no playoffs and direct promotion to the C2 series.

In 2000/01, after finishing the regular season in second place, the Desians earned a pass to the C1 Series by taking the runner-up spot at the Final-Six in Cassano d’Adda. He spent thirteenseasons in the C1 series, reaching the playoffs , five times to the semifinals and in the 2009/10 and 2013/14 seasons to the promotion final.

In the summer of 2014, an application for repechage to the Serie B was granted, allowing Aurora to return to the national third tier 16 years after its last appearance. This incredible experience lasted a full 5 years, achieving a great result, reaching the promotion playoffs, which were won in the 2017/18 season.

In the following season Aurora relegated again to the C Gold Series, a category it still plays in today.

Summing up Pallacanestro Aurora Desio over the years won the following titles:

  • 4 Junior/Under 20 National Finals (1995, 2000, 2004, 2017)
  • 3 Under-19 National Finals (2009, 2010, 2013)
  • 2 Cadet/Under 18 National Finals (1996, 2016)
  • 4 Under-17 National Finals (2008, 2011, 2014, 2015)
  • 5 Student/Under 16 National Finals (1996, 2005, 2006, 2007, 2016)
  • 7 Under 15 National Finals (2008, 2009, 2010, 2011, 2012, 2014, 2015)
  • 1 Under 14 National Final (2019)

We can only be proud of our team’s achievements.

As of today, Thursday, April 29, 2021, they are undefeated in the current league and are running straight into the playoffs for promotion to the minor league.

An unprecedented new and creative collaboration has been born: we offer the union of the moment of reading, to a moment of tasting the beloved black drink, to satisfy all the senses in a synaesthetic experience!

Some time ago, I was approached by the Milan-based publishing house Another Coffee Stories about a project that immediately got me very excited: combining coffee and culture.

They asked me if we had any way to combine some coffee with their book releases, and immediately my head started grinding ideas.

We have always narrated, both in the roasting plant in Milan and on the caffeernani.com website, all our coffees with the appropriate technical specifications to describe it; also through the immedesimation of the moment of tasting.

As you well know, each coffee has a well-defined and unique flavor and aroma profile that can bring back memories or make you feel different emotions.

There are coffees that are more edgy and unbalanced, others that are softer and more balanced. Some have a wider aromatic range, highlighting different sensations from time to time, while others are more focused on a few, but very intense, scents.

Why then not match each book with a specific coffee?

Each book conveys different fascinating experiences: romantic, hard, raw, adventurous and so on…
Hence, comes the idea of creating a synaesthetic experience, that is, perceiving multiple sensations together, stimulating sight and taste simultaneously.

With each Another Coffee Stories editions book purchased, you can receive a blend of Ernani Coffee expertly matched to the work. All in order to emphasize and embellish the peculiarities of each element and create a unique experience.

The publishing house

The publishing house was founded on December 4, 2020 as a laboratory of ideas for new publishing, which aims to break out of the usual industry logics to give voice to innovative and stimulating proposals. A young and open project that puts the author and his work in the foreground.

Indeed, the publishing house wants to build a fairer publishing industry that can offer authors the best possible recognition for their work. This is why it opposes the concept of “paid publishing” and seeks to give voice to the most innovative and inspiring proposals.

Another Coffee Stories is committed to accompanying writers from the creative stage to the distribution stage by putting in place an innovative promotion plan.

The publishing house’s project spans all literary genres: from fiction and poetry to nonfiction and also passing through graphic novels, photography and comics.

One of the peculiarities of Another Coffee Stories are the covers sewn on to the author and the novel, entirely handmade by the team’s illustrators, and the magnificent Zibbies characters, woolen puppets made entirely by hand, inspired by the characters in the books.

This I said I wanted to be as a child, so much so that I wrote it down in my first Italian assignment in elementary school. I was definitely a little confused about how the world was going, but I was clear about the two things I loved right away: books and animals…a little later coffee arrived!

A new product has entered Caffè Ernani catalog: the Brazilian Santos “Caffè delle donne”! A coffee in which the goodness of the raw material blends with the passion and respect of those who cultivate it.

Women’s Coffee is a single-origin from the Chachoeira farm in Brazil, grown, harvested and processed from a plantation adhering to the IWCA (International Women’s Coffee Alliance) protocol.

The IWCA is a symbol of the fight against exploitation and gender inequality. , with a greater focus on the grassroots of the coffee sector, in which farmers are generally poor and in disadvantaged social situations.

I am sure that after reading the article you will also agree with me and admire this project as much as we do at Ernani.

The IWCA is a global network that unites and supports the resourcefulness of millions of women around the world, starting in coffee trade hubs such as Guatemala, India and Brazil and now operating in more than 22 countries.

It is a nonpartisan, and inclusive organization, which does not consider gender, religion or political thoughts. Accommodates everyone, including individual, private or public organizations.

The only limitation imposed is sharing the common end goal of protecting the rights of every worker and strengthening the garrison of women in the coffee community, which has always been a very masculine environment.

The core values of the association are:

  • Respect for people and their ideas
  • Economic and social sustainability
  • Equity in the distribution of the world’s resources
  • Collaboration between communities and top management of corporate properties
  • The greater empowerment of everyone’s personal resources
  • Inclusion of all: women, men and youth, to make a positive impact on their communities
The key aspect is precisely that it ensures that everyone has the opportunity to lead a dignified, sustainable and meaningful life.

It strives to be able to provide equal employment opportunities for both sexes, as well as protect labor itself by preventing the exploitation of farmers.

Concrete efforts lie in awarding them higher pay commensurate with the cost of living, greater respect and protection of their rights, or the construction of in-plantation kindergartens or even the possibility of healthy housing at affordable prices.

We on the Ernani Coffee team strongly believe in gender equality.

As you have seen in past articles, one of our administrators is Claudia, without whom the whole machine could not move. An essential figure of the whole big family, to say the least, and a point of reference for everyone.

Then there is me, Martina, who is in charge of the entire marketing department, proud to be part of this team and ready to prove how much us young girls are worth in the working world.

Then we get to talk about Naima, the main figure in our Corso Buenos Aires roastery, with a great deal of experience behind her and who always brings a touch of serious lightheartedness to our service behind the counter.

And last, but not least, there are Alessandra, Carolina and Monia, who keep their colleagues in line and always careful to offer impeccable, fast and professional service.
