In 2020, we inaugurated the Ernani Academy, the academy with a 360-degree look at the world of coffee, in order to train professionals, but without excluding any coffee lovers or curious people, to grow together around the culture of good coffee.

Why did we create the Ernani Academy?

Torrefazione Ernani took shape from the desire of Luca and Claudia, two of the four founders, to be able to serve really good, intensely aromatic coffee without that classic burnt aftertaste and a strong bitter note.

Together with Paolo, the roaster of Caffè Ernani, they began the whole project with the desire to give a new life and a breath of fresh air to the Italian espresso.

The team’s continuous training and constant quest for improvement has given the staff a huge and unbridled passion for the roasted bean.

Having reached this point, it was obvious that we wanted to pass on all that we were learning and learning every day to you as well!

If we also consider the fact that practitioners often come from generational changes, where the craft is passed down through practical experience, and that’s just fine! However, you often lack the theoretical training behind you, which allows you to fully understand the variables of the bean and then know how to manipulate them to obtain an excellent and, above all, consistent product over time, without relying more on “chance.”

The Academy was mandatory, both for our clients and for all curious outsiders!

Discover the Ernani Academy

The Academy has 6 courses, covering the entire coffee supply chain, namely:

  1. Green Coffee – the course designed to acquire skills on the raw material processed, raw coffee, also called green coffee;
  2. Roasting – the perfect course to learn how to read the roasting curve and understand the different methods and levels;
  3. Cafeteria – the course suitable for professionals in the sector, to acquire knowledge on the raw material processed and on the extraction phase of the beverage;
  4. From single-origins to Ernani blends. – the dual-purpose course: introduction to the espresso tasting course and understanding how different coffees influence the flavor profile of the final blend;
  5. Espresso tasting – the course as a true sommelier, which will give you all the tools suitable for carrying out a complete organoleptic analysis of the espresso;
  6. Brewing – the course that requires the most manual skills of all, to deepen the methods of extraction of coffee as an alternative to espresso.

Bar Management

The course with the goal of understanding how to conduct an economic and financial analysis of one’s business, calculating food cost, to forecast future investments and/or strategies.

  • Examination of green coffee samples;
  • Organoleptic profile and area of ​​origin;
  • The defects of green coffee;

  • Basic knowledge of green coffee and its selection;
  • The roasting process;
  • Useful tools for roasting;

3. Cafeteria

Course program:

  • Basic knowledge of green coffee;
  • Selection of a good bench blend;
  • Definition of espresso;
  • Espresso extraction;
  • Equipment selection;
  • Equipment maintenance and cleaning.

5. Espresso tasting

Course program:

  • Basic knowledge of green coffee;
  • Basic knowledge of roasting levels;
  • Definition of espresso;
  • Sensory analysis;
  • Compilation of tasting cards;
  • Espresso coffee tasting and its description.

Time required: 6 hours.

Trainer: Martina.

6. Brewing

Course program:

  • Knowledge of green coffee;
  • Basic knowledge of roasting levels;
  • Definition of brewing with their basic recipe;
  • Practical extraction by different methods;
  • Coffee tasting and description.

Specifically you will use: Mocha, Napoletana, Chemex, V60, Clever, Aeropress, Flower, French press, Cold brew dripper, Brew bottle, and Syphon.

Time required: 5/6 hours.

7. Bar management

Course program:

  • How to start the Business, with Brand Identity analysis;
  • Formulation of goals with related strategies;
  • Calculate the Food Cost and the Break Even Point;
  • How to collect and analyze data, with provision of useful material for one’s own activity;
  • Work area organization and proposed offer;
  • Sales strategies.

Time required: 4 hours.

How to enroll in the Ernani Academy

All courses are held at the company’s headquarters in Desio, Via Don Luigi Sturzo, 19 (MB), or, if you work at a venue, we can come to you. However, there will have to be suitable requirements for the course to be conducted.

The courses, however, in Green Coffee and Bar Management, as these are only theoretical, can also be conducted via online video call.

We are usually available Monday through Friday from 9 a.m. to 6 p.m. However, it is also possible to take the course on other days or time slots for a small extra charge per person.

How to book?

There is no real course calendar with set dates, as we have decided to be flexible to try to meet all your requests.

In fact, we know that those who work in this field often have only one day off, and this varies throughout the week, so feel free to write to us about your availability and we will make arrangements. That is why in the registration form we have left the option to enter the two dates that are most convenient for you.

Our only requests are:

  • A notice of at least 2 weeks before the desired date, so that we can prepare ourselves in the best possible way and offer you the best service;
  • A minimum of two participants. If you do not know anyone to participate with, we will enter you in our records and you will be contacted as soon as there is a vacancy.

The Ernani Christmas Blend has arrived!

Like every year during the winter holidays we always create new products designed to celebrate with friends and relatives, which can bring together and surprise everyone!

Today I introduce you to the Christmas Blend!

A coffee with an unmistakable taste, capable of leaving an indelible mark in your memory!

Here’s why:

  • It’s a coffee designed to conclude a lavish lunch, which reactivates and helps digestion, thanks to the caffeine content coming from the robusta part of the blend;
  • It’s also a coffee to be sipped calmly, as it almost resembles a nice cup of steaming, sweet and delicate tea, with fruity aromas if extracted in a filter; or a delicious hot chocolate flavored with cinnamon, creamy and enveloping, if prepared in mocha or espresso.

Creation

Special thanks to Paolo and Andrea, our roasters, for having succeeded in obtaining such a balanced and intensely aromatic coffee, the result of a skilful marriage between the Arabica coffees of Central America and the African varieties of Robusta.

After researching raw coffees and following various researches, tests and tastings, they achieved their goal: a sweet, creamy and intense coffee!

Composition of the Blend

The blend is composed by a higher percentage of Arabica coffee:

  • A single-origin Guatemalan Arabica from the Huehuetenango region, grown at about 1450 m above sea level, harvested with the picking method, then manually and then washed;
  • A single-origin Brazilian Arabica, from the Cerrado region, Bom Chocolate plantation, grown at about 1000 m above sea level, always harvested with the picking method and then processed with the natural method;
  • A single-origin Robusta Superior from Tanzania, grown at 900m above sea level, natural;
  • A single origin Robusta from Congo, Mombasa region, cultivated at 900m above sea level, natural;
  • A single origin robusta from Uganda, grown at 900m above sea level, natural.

Sensory description

The arabica part, which makes up 70% of the beans in the package, offers the coffee a broad and pleasant aromatic spectrum, with sweet notes of chocolate, caramel, nuts, fresh fruit and a light freshness given by citrus fruits.

Everything is balanced by a delicate bitterness given by the Robusta coffees, with more intense notes of dark chocolate.

Finally, if extracted in espresso, the cream is compact and persistent, with an intense hazelnut color, while the body is round and enveloping.

It is a coffee suitable for those looking for a balanced blend of sweetness and bitterness, with enveloping notes of ripe fruit and chocolate.

Medium Roasting

Everything is then enhanced by the Medium Roasting, Ernani’s distinctive signature on all its products, carried out separately for each single origin.

The Medium Roasting enhances all the natural aromas and qualities of carefully selected raw coffee to the max, bringing the best of each bean into the cup.

Finally, it never makes the coffee excessively bitter, therefore perfect to be enjoyed without sugar.

But be careful that just as it enhances all the merits it also enhances all the defects, so you need to start from a high quality raw material!

We recommend extracting a dose of 7.8-8.2 g per person to obtain an intense, creamy and especially fragrant.

Already on the nose you can perceive a marked aroma of cocoa which is then also found on the palate. The acidity in this case is soft and recalls that of red fruits.

Overall it is a good coffee balanced between acidity, sweetness and bitterness.

Mocha pot

The nose smells of nuts and chocolate.

Also in this case the result is a balanced, enveloping coffee with a pleasant acidity and good bitterness, accompanied by the sweetness of ripe fruit.

Chocolate is the predominant taste and is very persistent over time, leaving an excellent aftertaste in the mouth.

Filter

If extracted in a filter, on the other hand, the nose perceives an intense aroma of cinnamon and red fruits, which can recall a tea.

Notwithstanding it is a blend and not a single origin, it is a good filter coffee: balanced, round and above all without defects. I recommend a water temperature of 92°C.

As every year, October 1st is the International Coffee Day, together with MilanoCaffè 2022.

On this day we like to promote a different characteristic of coffee and its supply chain every year:

  • in fact, in 2019 we opened the doors of our roasting lab in Desio to show how raw material is transformed;
  • In 2020 we allowed you to taste the first single origin espresso served at the bar of the Torrefazione in Milan, to broaden our horizons and experience first-hand the fact that “coffee is not just a coffee” and that each of them has a completely different aromatic profile;
  • Finally, in 2021, you had the opportunity to get to know two projects we care very much about: the Caffè delle Donne, following our enrollment in the International Alliance of Women in Italian coffee, and the For the Planet blend in collaboration with Gone West, for environmental support. In this case, we discovered how the coffee sector is committed to protecting both rights and the environment.

This year we return to our production laboratory, to involve you 100% in the creation of a blend!

In fact, it was you who guided us in the creation of a new and unprecedented coffee!

In fact, on the occasion of the International Coffee Day and MilanoCaffè 2022, we will present at the historic roasting shop in Corso Buenos Aires, 20 and on the website www.caffeernani.com a new blend, called “My coffee”.

We all of the Ernani team wanted to give a real and concrete space to our customers, together with active users on our social channels. We therefore decided to launch a contest: #BuildYourBlend, that is, create your own blend!

For a week we have therefore published, in the stories of the @caffeernani profile on

Instagram, a series of questions useful for creating the organoleptic profile and the composition of the future blend.

You all answered and the option with the most votes won!

In the first question we asked what degree of sweetness was desired: whether a “very sweet”, “moderately sweet” or “not at all sweet” coffee.

The most awarded entry was: “Medium sweet“.

The second request was “what degree of bitterness was desired”.

We are very proud of this result in particular, as the followers replied “Almost zero bitterness”, finding us in total agreement with them, intent on tasting more fragrant coffees rather than bitter and full-bodied.

Below we asked for the level of acidity, winning, as in the first case, the item “Medium acid”.

Finally, the last question concerned the desired aromatic notes, including “fresher and sweeter notes of citrus and fruit” or “more rounded, of chocolate and caramel”.

The winner was the second.

All these data were then delivered to Paolo and Andrea, the roasters at Caffè Ernani, who immediately set to work to create the blend that reflected all desired parameters.

The creation of the blend

The creation of the blend was more complicated than we expected, as we wanted to offer a Premium, which truly reflects 100% the characteristics you desire and, above all, which is different from all the other Ernani blends, not a simple reblending of coffees already in our experience…

We started by taking one of our single origin coffee still not present in other blends, namely Guatemala, combining it with another Arabica coffees that could give a good sweetness and a soft acidity, however, realizing that these two coffees together did not give the desired result.

We then mixed them with 4 other Arabica origins, but we weren’t there yet.

We had to change our main subject, so we went from Guatemala to Colombia, then joining it to the Indian Kalledevarapura.

Perfect, the base was there: sweetness and creaminess, but lack of originality.

Thus Guatemala returns and… yes, now here we are!

The sweetness and creaminess is now balanced by the acidity of the fruit!

However, that rounder note of chocolate was still missing, and perhaps a little more body.

And this is where the robusta came in!

Initially we did not want to insert it, to reflect the request for “almost zero bitterness”, but trying was wort it!

And fortunately…

It was exactly what the blend lacked: Congo Mombasa, which thanks to its high quality combined with the Medium Roast, does not release any bitter notes, making acidity and sweetness prevail, giving body and cream together.

Here is finally presented the blend “My coffee”, because anyone who orders it, will really order “His coffee”!

Sensory description

Will you feel on the palate?

The blend is composed of 85% Arabica coffee and 15% Robusta coffee.

The prevailing taste is, as already mentioned, the sweetness of fruit and chocolate, balanced by a soft freshness given by citrus fruits, festing with aromatic intensity and creaminess!
The part of Arabica coffee is made up specifically of:
  • Colombiano Supremo Finca la Meseta, with notes of fruit and almonds;
  • Indian Kalledevarapura Estate, creamy and round coffee, with sweet aromas of chocolate, vanilla and fruit;
  • Guatemala SHB Huehuetenango Specialty Coffee, intense and fruity, with a good freshness given by the notes of red fruits.

While the part of Robusta is entirely made of the single origin Congo Mombasa, an excellent intense robust, creamy and full-bodied, with an aftertaste of dark chocolate.

Where to try and buy it

The “My coffee” blend will be available at the Torrefazione Ernani in Milan where you will be able to taste it extracted in espresso. It will also be possible to buy it there for later home use, both in beans and ground at the moment, tailored to your needs!

For those who cannot go to Milan, Il Mio Caffè will also be present on the caffeernani.com website, in the 250g format in beans or ground, for mocha, espresso or filter.

Ideation

Paul, as Ernani’s roaster, was looking for an intense blend with a nice bitterness, suitable to please lovers of dark, full-bodied coffee, rich in caffeine, thus energizing and perfect to start the day.

That is why he decided to include only African robusta coffees. The result was to be a blend where bitterness and intensity prevailed over sweetness and acidity.

Composition of the mixture

The blend is composed, as mentioned above, of only robusta (Canephora) species coffees.

You will find specifically:

  • Congo HTM/N/M natural, coming from Mombasa northeast region, 600m above sea level;
  • Tanzania Superior 16 natural, from the Bukoba region, 800m above sea level;
  • Uganda 18 natural, coming from Mendo / Masaka, between 600 and 800m asl.

Sensory description

The taste is an intense coffee with notes of bitter cocoa, pepper, nuts and licorice.

Occasion of use

The amount of caffeine present makes it perfect as a morning coffee for an energizing breakfast.

Suitable for

The Stretto is therefore suitable for you if you are looking for an intense, creamy, full-bodied coffee with good bitterness but still leaving no unpleasant taste in your mouth.

Medium Toast

This is then enhanced by the Medium Toasting, Ernani’s distinctive signature on all its products, carried out separately for each single-origin.

The Medium Roast brings out all the natural flavors and merits of carefully selected raw coffee to the fullest, bringing the best of each bean into the cup.

It also never makes the coffee overly bitter, so it is perfect to enjoy without sugar. Despite the strong intensity brought by the robustas, the coffee is yes more bitter than Ernani’s other blends, but it is still not annoying and most importantly, it never tastes burnt!

Methods of extraction

Here are tips on the four possible macro draws:

  • Espresso
  • Mocha
  • Paper filter
  • Capsules

I anticipate that Strait makes the best of espresso and capsules.

Espresso

Espresso extract we recommend a dose of 7 g per person to achieve an intense and creamy cup, and a water temperature of 94°C.

A distinct aroma of bitter cocoa and nuts can be perceived on the nose, which we then find on the palate.

The acidity here is absent, while the bitterness is well present, with notes of bitter cocoa, pepper and licorice.

Overall, it is a good morning wake-up coffee.

Mocha

It turns out a bit more bitter because of the extraction method and the associated high temperatures.

The acidities are completely absent, while the hint of cocoa is always present.

Paper Filter

When extracted in a filter, few scents and little intensity are perceived on the nose.

Indeed, it is not a coffee suitable for filter extractions, carrying slight woody notes.

Compared to other coffees, in filter it expresses an aromatic spectrum that is not very broad and not very pleasant.

Capsules

It is very similar to espresso, but differs in that it has less bitterness, thus being more balanced overall.

This is my personal experience: initially I didn’t drink coffee, because not knowing it, I thought it could only be bitter, and I don’t like bitterness.

Paul, as the roaster of Ernani, was looking for an intense blend with more bitterness than the other blends presented so far (Blue Diamond >>, Cheerful >>, Harmony >>), and energizing, thus perfect for starting the day.

All the while, however, always leaving that delicate freshness, given by the arabics present.

That is why he decided to include Central and South American Arabica coffees and some African robustas. The result had to be a blend where acidity, sweetness and bitterness did not overpower one another.

Composition of the mixture

The blend is composed of a higher percentage of robusta species coffee than arabica.

You will find specifically:

  • A delicate freshness brought by washed arabica: Colombia Supremo Finca la Meseta;
  • A good sweetness brought by natural arabica: the Brazilian Santo Cerrado Bom Chocolate;
  • And a slight bitterness brought by the robust naturals, from Congo, Tanzania and the Ivory Coast. This also brings good body to the cup, especially when extracted in espresso.
