Today the article is dedicated to Ernani coffees, or rather, we will try together to find the perfect Ernani coffee for you and your tastespersonal!

if you don’t know well this world and the characteristics of the beans, how can you choose the right coffee?

So here is the complete guide to choosing the Ernani coffee to buy!

I will try to be simple and schematic, showing the main differences of all our blends and single origins, so as to understand the soul and obviously the final taste in the cup!

The medium roast

First of all, it is important to say that every Ernani coffee, whether blended or single-origin, Arabica or Robusta, is always roasted at a Medium level!

What does it mean?

As you can see in the photo below, the color of the beans is a nice warm, light and opaque brown.

This level of roasting allows you to fully enhance all the natural aromas present in our carefully selected and defect-free raw beans. This makes the cup of coffee extract intensely aromatic, with hints that can range from chocolate to fruit, from citrus fruits to flowers, from dried fruit to spices and so on, and above all with a low bitterness!

The question that now arises spontaneously is: so called, medium roasting would seem the best… why then don’t all roasters apply it?

The answer is very simple: because just as it enhances all the merits of green coffee, it also enhances any defects.

Defects can be both physical and olfactory, such as broken, moldy or infected-infested grains, with hints of ash, rubber, tar, wet grass, wood, rotten or unripe grains, etc.

Obviously some roasters, especially those of the commercial brands, buy these raw coffees at very low prices, and roast them at a dark level to make them very bitter, in this way any gustatory defects are hidden.

So we understood the general soul of Ernani coffees: creamy, intensely aromatic, fresh, sweet and never too bitter!

Differences between Ernani blends

The blends, as it is easy to guess, are packs made up of several coffees, coming from various parts of the world, each of which gives the final cup its own characteristic.

Ernani blends are 5:
  • Blue Diamond – 100% arabica
  • Allegro
  • Armonia
  • Vivace
  • Stretto – 100% robusta

For convenience we divide them into two groups: those with a higher percentage of Arabica and those with a higher percentage of Robusta.

Blue Diamond
  • 100% Arabica
  • It is more acidic than sweet and bitter
  • Aromatic notes: Blackberry, pink grapefruit, honey, cocoa and almond
It’s perfect for you if you want fresh, delicate and very fragrant coffees.

It’s not for you if you want a creamy, bitter coffee with low acidity.

Allegro
  • 70% arabica – 30% robusta
  • It is balanced between acidity and sweetness, little bitterness
  • Aromatic notes: Cocoa, hazelnuts and citrus fruits
It’s perfect for you if you want balanced coffee between aromas, acidity and sweetness.

It’s not for you if you want a coffee with more bitterness or no acid at all.

Armonia
  • 60% arabica – 40% robusta
  • It is balanced between sweetness and bitterness, little acidity
  • Aromatic notes: chocolate and caramel
It’s perfect for you if you want coffee chocolates and sweets.

It is not suitable for you if you want a coffee that is more bitter than sweet or, on the contrary, more delicate and fragrant.

Vivace
  • 40% arabica – 60% robusta
  • It is more bitter than acidic, with a good level of fragrances
  • Aromatic notes: Cocoa, spices and fresh fruit
It’s perfect for you if you want creamy, tangy coffees, but still with fruity overtones.

It is not suitable for you if you want a delicate and fragrant coffee.

Stretto
  • 100% robusta
  • Bitterness and body are the masters
  • Aromatic notes: Bitter cocoa, nuts, pepper and licorice
It’s perfect for you if you want very creamy and more bitter coffees, without acidity.

It is not suitable for you if you want a delicate and fragrant coffee.

N.B. Though the percentages of Arabica and Robusta as a tool of differentiation, actually taken as a figure by itself doesn’t mean much.

Of course, if we buy a 100% Arabica coffee we imagine it more delicate and fragrant, with greater acidity. It is also true, however, that if the originally selected Arabica is poor and/or dark roasted, the taste will simply be bitter and fragrance-free.

To be clear, our 100% Robusta is sometimes less bitter than some super roasted Arabicas on the market!

So let’s also look at the percentage, but let’s not only rely on this, we also check the aromatic profile, the origins and the level of roasting.

Differences between single-origin Ernani

The single origins are instead packs made up of a single coffee, coming from the same geographical area and plantation, releasing the scents, aromas and sensations of that specific land.

The single origins Ernani are 6:
  • Ethiopia Sidamo
  • Guatemala Huehuetenango
  • Colombia Finca la Meseta
  • Indian Kalledevarapura
  • Brazilian Women’s Coffee
  • Brazil Bom Chocolate

For convenience we divide them into two groups: those with greater acidity and those with greater sweetness.

Among these I also indicate the Blue Diamond, which despite being part of the blends, we also compare it to single-origin Arabicas, being precisely a 100% Arabica.

Blue Diamond
  • 100% Arabica
  • It is more acidic than sweet and bitter
  • Aromatic notes: Blackberry, pink grapefruit, honey, cocoa and almond
It’s perfect for you if you want fresh, delicate and very fragrant coffees.

It’s not for you if you want a creamy, bitter coffee with low acidity.

Ethiopian Sidamo
  • Single-origin Ethiopian Arabic, Sidamo region
  • 1800 m slm
  • Washed, this method enhances the acidity
  • It’s very delicate
  • Aromatic notes: Citrus fruits, flowers, fruit and milk chocolate
It’s perfect for you if you want rather acidic and delicate coffees, with fruity and floral notes.

It’s not for you if you want a creamy, bitter coffee with low acidity.

Guatemala Huehuetenango
  • Guatemalan monorigine arabica, Huehuetenango region
  • 1350m asl
  • Washed, this method enhances the acidity
  • In addition to the acidity it has a great sweetness
  • Aromatic notes: Strawberry, plum, peach and chocolate
It’s perfect for you if you want coffee balanced between great sweetness and a marked acidity, with a fruity taste.

It’s not for you if you want a creamy, bitter coffee with low acidity.

Colombia Finca la Meseta
  • Arabic single origin, Medellin region
  • +1000m slm
  • Washed, this method enhances the acidity
  • It is delicate and fresh, balanced between sweetness and acidity
  • Aromatic notes: Ripe fruit and red fruits, dark chocolate and hazelnuts, lemon
It’s perfect for you if you want balanced, fresh, floral and fruity coffees, with less pronounced acidity.

It’s not for you if you want a creamy, bitter coffee with low acidity.

Indian Kalledevarapura
  • Arabica indian single origin, region Karnataka, Baba Budan Hills
  • 1000-1450m slm
  • Semi-washed, this method gives a good sweetness and freshness
  • It is creamy, enveloping and with a wide aromatic range
  • Aromatic notes: Almonds, tea leaves, red fruits, milk chocolate, tobacco and vanilla
It’s perfect for you if you want a creamy, enveloping coffee full of scents that change you with every sip.

It is not suitable for you if you want a coffee with strong acidity or, on the contrary, very bitter and creamy.

Brazilian Women’s Coffee
  • Brazilian Arabic single origin, Chachoeira plantation
  • 1000m slm
  • Natural, this method brings out the sweetness
  • It is predominantly sweet with fruity hints
  • Aromatic notes: Almond, red fruits, grapefruit and cocoa
It’s perfect for you if you want balanced, fresh, floral and fruity and sweet coffees.

It is not suitable for you if you want a creamy and bitter coffee, with low acidity or conversely a markedly acidic coffee.

Brazil Bom Chocolate
  • Brazilian Arabic single origin, Cerrado region
  • 900-1000m asl
  • Natural, this method brings out the sweetness
  • It’s sweet and chocolaty
    Aromatic notes: Cocoa and nuts
It’s perfect for you if you want round coffee, mostly chocolaty and sweet with a low acidity.

It is not suitable for you if you want a creamy and bitter coffee or conversely a markedly acidic coffee.
